  • Ginjo (吟醸) refers to sake brewed with a rice polishing ratio of 60% or less (40% of the rice is gone).The rice polishing ratio for ordinary sake is around 70%, but ginjo has a higher polishing ratio and is characterized by a mellow aroma and flavor. It is also characterized by a strong acidity and a clean, refreshing taste.
    Daiginjo (大吟醸) is the highest quality sake brewed with less than 50% polished rice (50% of the rice is gone). Because the rice polishing ratio is even higher than that of ginjo, the sake has an exceptional aroma and flavor, and is characterized by its extremely delicate taste. As a result, it is more expensive than ordinary sake.

      While yes, sake is Japanese, Kanji is based on the Chinese Hanzi, so they could very well be Chinese characters.

      Thanks for watching! You’re absolutely right! And as @gilarak wrote, kanji characters originally come from China. If I wrote 大吟醸 in Japanese hiragana (which is also based on Chinese characters) it would look like this: だいぎんじょう
