A friend comes over once a month and we cook for the month for me. I am disabled and it makes it a lot easier and healthy. I chop everything up and if there is something cold to put together I do that. We have the instant pot, crock pot, oven and cooking on top of the stove going. We then divide the meals up into serving size. Fill my freezer. I keep about 6-8 serving in the fridge. So when it starts to get low just pull some from the freezer. It’s a lot of fun. I use to cook all the time and I miss it but this is a good compromise. It usually takes about 6 hours. That’s from beginning to total clean up.
Meal prep is a huge time saver!! 😊

Wow! Such a great idea! Especially since you're involved in the cooking. My mom was in an accident and her right hand was damaged so she's not able to cook and she loves to cook for herself and for her loved ones. This would be a great idea for her!

When freezing anything in a glass jar let it fully cool and don’t fill it to the top. Leave 1-2” to allow for the expansion. If I were freezing beans, after completely cooling I would just put them in good freezer bags and lay them flat on a cookie sheet in the freezer for an hour. Once frozen they take up so much less space in the freezer and thaw quicker when you want to use them. I do this with a LOT of foods, I hope this helps.

Oreo Emesis I totally understand that! (I had too as I always had a very small freezer when my kids were growing up and I was a SAHM on a tight budget. Plus we didn’t know better then...)
Just leave enough room for the contents to expand in the jar. I make freezer jam in mason jars and I learned this the hard way...😢 once I knew to leave some air space for it to expand it never happened again. I hope this helps you.

The best challenges in the kitchen is to have a experiment in inventing new flavors and recipes. Well at least what I was taught. I'm puertorriquen an us latin love to invent in the kitchen when we don't have much on hand. With all the spices Solo used practically took me back to latin flavors. I guess it will come out just fine in the taste as long as it isn't to salty Lol 😉 This prep will help you out so much Sarah specially now that you have baby Seth BTW I missed him in this video. God bless and good work everyone. 😊😉

Hi Sara and Solo! What great parents you are and it is so nice to see, how happy you all are! I have a very quick, cheap and delicious dinner recipe, for you folks to try. I used to be a chef in area restaurants and this was a frequent lunch special! I think you will all love it! It takes only 20 minutes from start to finish! I am originally from Maine but this dish is a New England favorite. It is called; American Chop Suey. You need to cook 2lbs of pasta. While the pasta is cooking, brown about 3 lbs of Hamburg with chopped onions( at this point, if you like peppers, celery etc. you may add that also while cooking the meat. Drain the excess fat. Then add 2 large cans 28 ounce, of diced/whole, tomatoes; 2cans of plain tomato sauce, salt and pepper to taste. I usually add about 1-2 cups of the pasta water. I also like to add about 1teaspoon of celery salt. Taste for seasonings too! Let that simmer for about 5-10 min. Drain the pasta and put it back in the pot. Add your Hamburg sauce in with the pasta.? Stir it and voile’, done! It is sooo good! You can mix it up too by adding ground Italian sausage and half Hamburg. It is richer and more flavorful. I hope you try it and enjoy it! Even if you had a long, tiring day, one of the older children can help out by making it! A nice simple salad and your fresh bread!!!!! YUMMY!

Sara, I have a great suggestion for your instant pot. I saw this on Six Sisters’ Stuff yesterday and tried it last night. You do this the evening before you plan to use this for breakfast. The recipe called for two cups of water for every cup of old fashion oats placed in the IP. Cook on high pressure for just four minutes, and then leave it alone until morning. It will stay on “keep warm” for ten hours. It was the softest, creamiest oats I’ve ever eaten. It didn’t stick to the bottom of the pan and was so easy to clean up. This could work well on your busy mornings.

I don't have a gas stove either, so to avoid the wateriness of the stir-fry veggies I put my veggies, fresh or partially thawed frozen ones, on sheet trays in the oven and roast them and then add them all together in with my stir-fried tofu (since I don't eat meat) but used to be my stir-fried meat I would add them into...makes them not soggy add a lot yummier!

Love y’alls videos and can’t wait for y’all to post! The pork looks really good! 😊😋 Have you tried making the cheesy chicken spaghetti? It’s made in the crockpot and is so delicious!
Recipe just in case you’re interested...
    INGREDIENTS
2 cans(10.5 oz) cream of mushroom soup
    1 can(10oz) can Rotel
    4 oz cream cheese, cubed
1 (16 oz) block of Velvetta cheese, cubed
    1 tsp. Garlic powder
    1 tsp. Onion powder
2 lbs. boneless skinless chicken breast
1(16 oz) package spaghetti, cooked til almost done
    1 cup shredded cheddar cheese
    DIRECTIONS
Spray crockpot liner with nonstick cooking spray. Add undiluted soup, undrained tomatoes, cream cheese, Velveeta, garlic powder and onion powder. Mix well. Add the chicken and cover with lid. Cook on low for 4 hours or until chicken is cooked through, pull chicken out and shred/cut up. Add back to crockpot along with noodles. Mix well. Continue to cook until chicken and noodles are completely cooked. Stirring occasionally.
We love this with a simple green salad or steamed broccoli and some garlic bread. So delicious!

We just re-stocked our freezer last Wednesday after it needed a big defrosting. I might have told you guys about it (hoping the supermarket was fully stocked). Well they were and so it is chock full now! :D With stuff like the Corona virus "floating" around, you never know. Several countries, people are raiding the supermarkets. Our pantry is filled at all times, we go to the supermarkets (Lidl & Aldi) twice a week, since they are just around the corner from us, and so we stock as we eat out of freezer & pantry. I think we're OK... so far. Loved the challenges and the meal prep! It is such a big help.

I’m taking notes on all your meal preps ( including Solo’s experiments), so hopefully things will be looking up around here too with meal preps. Your hair looks fine! You made 5 meals shad! Nothing can bring the day down now. Try a sprinkle of white or Apple cider vinegar in your sweetened broccoli salad dressing some time. It’s so delish! A teacher covered dish gathering was my 1st time trying it and I CRAVE it now! So SO good! 🍒❤️🍒🌸🍒❤️🍒

Lol "This is going to be really interesting". Your response to Solo's ingredients. We might just have chicken chili tonight. However it's starting to feel like Spring here and everyone is grilling this last weekend. Hmmm

The cooking videos are great. Especially when solo is there . Great changes by UA-cam , I was worried you would stop creating but instead you just changed directions and made it more educational for adults . Thanks!
