Thanks for this video! I love chorizo, but I am allergic to soy. Most store-bought chorizo has soy flour and other soy stuff. I watched your video, bought a meat grinder attachment for my mixer 4 weeks ago, and so far, have made 6 pounds of chicken chorizo, and 2 pounds of pork chorizo. Your recipe is great, and I have tips for those making chorizo using your recipe. White vinegar tastes much more like the traditional chorizo to me and my family, apple cider vinegar has a sweeter back note when you cook it. If your chorizo tastes not quite like chorizo, add more vinegar and more garlic while you cook it (my chicken chorizo I have to add a half teaspoon per 4oz of chorizo). The vinegar makes the spices pop and reduces the 'dry' aftertaste of using so much chili powder. Thanks again for all of your videos and hard work. I have made 4 of your recipes and they are all amazing!
This is the best chorizo I’ve ever had! I’ve just made up my second batch, 8lbs, to freeze. It even beats our local Mexican meat market by a long shot. Theirs is dry and ho-hum. Also I like knowing what’s in my food! Such a joy. Thank you 🥰🎉

For over 40 years I have been consuming this style of chorizo from my home town in South Texas area and this particular recipe with mild tweaking is 100 percent on point to a certain particular Texas grocery store based popular chorizo product. Such an authentic flavor, that now living very far away from home and having a hard time sourcing mexican spices, I was finally able to recreate to such an extent it has brought something back I missed alot from my Texas heritage. Thank you for this recipe, and I will be able to recreate something missing for me again.

I happen to stumble across their videos and fell in love. As Stephanie mentioned in her first few videos that we have the feature of fast forward or skipping if we want. She likes to show the whole process and how to fix any mistakes that may arise. I have already tried a few of their recipes and they turned out awesome. I am looking forward to this recipe because we love chorizo here so it won't last long. We will grind our own pork and make some fresh chorizo this weekend using this recipe. Totally awesome.

I found this from your 2021 first video of breakfast soup! I can not thank you enough! I could not find Mexican chorizo in Peru. I'm BEYOND happy. My boys just LOVE soup! Many. This is what I love to find. A recipe that cuts corners to make, which looks good, a great Mexican dish. I used to make my own when I was stationed in Norfolk, VA many years ago. I lost the recipe. I will be trying this recipe first chance I get. I will be using lard instead of oil. Lard is not bad for you.

I live in a small city/big town in Canada and it's not always easy to find some products, and I enjoy making things from scratch. I have the meat grinder/sausage stuffer attachment for my kitchen aid so I'm going to have to try this. I think I might try smoking some with mesquite and see how it turns out. Thank you for this. Quick tip: After you wrap (using sushi mat) try pinching both sides of the excess plastic, roll the meat towards you keeping it on table, lift and repeat & both ends will soon twist themselves shut ♥️ I do this for my compound butters as well. Here in Detroit, MI fresh chorizo is at least $4/lb. I just bought 1.67lbs of ground pork for .79 at my local grocery store. So here it’s definitely cheaper to make your own!

Fun fact to everyone in the comments, you can sub out the pork with ANY ground meat, turkey, even soy. Use the Beyond meat for a vegan option (use the egg replacer) The seasoning is absolutely delicious in every thing I've added to it to make "chorizo".

I bought chorizo at Tajeda's Mexican Market in SLC. A customer and the checker grilled me on how to cook their in house sausage. Slice sausage 2/3rds through lengthwise. Have your comal heated and lay butterflied chorizo on comal. I used med heat, 325, cooking until very warm on top, flip and flatten. Do twice. Egg was cooking next to sausage and was draped over to serve.

This is what I love to find. A recipe that cuts corners to make, which looks good, a great Mexican dish. I used to make my own when I was stationed in Norfolk, VA many years ago. I lost the recipe. I will be trying this recipe first chance I get. I will be using lard instead of oil. Lard is not bad for you.

I live in a small city/big town in Canada and it's not always easy to find some products, and I enjoy making things from scratch. I have the meat grinder/sausage stuffer attachment for my kitchen aid so I'm going to have to try this. I think I might try smoking some with mesquite and see how it turns out. Thank you for this. Also, I just realized that I'm watching this while eating pupusas that I got from your channel as well. Very nice, so thank you for that as well.

Quick tip: After you wrap (using sushi mat) try pinching both sides of the excess plastic, roll the meat towards you keeping it on table, lift and repeat & both ends will soon twist themselves shut ♥️ I do this for my compound butters as well. Considering how cheap store bought chorizo is, I can't imagine myself ever making this, but I learned a new trick. Pulverizing the guajillo is genius.
Here in Detroit, MI fresh chorizo is at least $4/lb. I just bought 1.67lbs of ground pork for .79 at my local grocery store. So here it’s definitely cheaper to make your own!
Considering what store bought chorizo has in it (gross) you might reconsider making your own. Unless you’re talking about bulk chorizo.

Fun fact to everyone in the comments, you can sub out the pork with ANY ground meat, turkey, even soy. Use the Beyond meat for a vegan option (use the egg replacer) The seasoning is absolutely delicious in every thing I've added to it to make "chorizo".

I bought chorizo at Tajeda's Mexican Market in SLC. A customer and the checker grilled me on how to cook their in house sausage. Slice sausage 2/3rds through lengthwise. Have your comal heated and lay butterflied chorizo on comal. I used med heat, 325, cooking until very warm on top, flip and flatten. Do twice. Egg was cooking next to sausage and was draped over to serve.
