I make this for my family but I also add cilantro and peppers to the paste along with a splash of vinegar. I marinade my onions and habaneros sliced together in lime juice with salt and pepper- bomb I swear- you nailed this.

You're suppose to burn the leafs before making the meat. It is one in the oven without the water. And the onions are cooked in lime juice afterwards. As for the salsa I personally don't eat it because it's so spicy but I see my parents make it more burnt via molcajete to give it more taste 👍
