    WOW!!! I just made this and it is amazing!!!
    This is going to taste great over a tatsoi salad, my dinner later tonight.
    I am not a vinegar fan, but this is so well balanced, the vinegar is well hidden.
    While making the dressing I have to say I had my doubts because the smell of vinegar filled the kitchen and I wasn't a happy camper. Then I added the sugar, mustard and bacon flavored oil and like magic it was transformed into manna from heaven.

    I used to eat Spinach salads at a steakhouse in San Diego in the 1980s. I loved it then forgot about it when I left the area. I never could figure out the dressing, the ones I saw online missed the point and tried to make it healthy. Anyway, the only difference was adding hard boiled eggs to the salad. Loved that I found this on your channel!

    Thanks soooo much; I line cooked at a great restaurant where the salad was made with broccoli and I gorged on it whenever I got the chance! Now I can have it again thanks to you! The addition of the corn starch made it over the top, better than any recipe I could find here :-)

    Chef John, This is one delicious salad. That dressing is amazing! Not New Years, made it with sliced hard cooked eggs instead of the black eyed peas.

    my mom does a warm bacon dressing for a spinach salad with feta and either strawberries or raspberries....SO GOOD. you guys must be on the same page

    Except for the mustard, this is pretty much the same kind of dressing for German potato salad, and its also really good with steamed kale (or other leafy greens)... so goood...

    I have a twist my. Mother taught me. I’m 68. Skip the veg oil and corn starch. In its place add an egg with a TBS of flour. When the vinegar and water et al boil put in the egg and flour.

    chef john, can i sautee the mushrooms as well? im not a fan of raw mushrooms, i thought i could sautee it in some of the bacon oil right before doing the onions. will that work too?

    @lazaros21st yes you can go to your local grocery store wash them dry them cut them up and put them in your salad..........just dont go picking your own mushrooms :)

    @jbhater68 Just use a smaller amount of cayenne pepper or none at all. Paprika just adds color and not a whole lot of flavor.

    @amnch07 that's not true, you can dress a salad with lemon and salt or salt, pepper and a bit of olive oil.

    @LunaAumento if the vegetables are good and fresh they taste wonderful and exciting. of course there's nothing wrong about eating whatever you want. but as a vegeterian in process I know the difference between the meaty kind of flaviour and the real flavour of things and to eat raw and very fresh feels better and more exciting in my opinion.

    Why are people freaking out? Oil and vinegar are standard in dressings, and this is just three tablespoons of dressing over a salad. Nobody's suggesting anyone drink the dressing straight out of the pan.

    @flofDan for me the point of eating vegetables is to feel the flavour of them. i'm not saying what it's right or wrong. but salad should in my opinion taste like salad, which is delicious if you have it fresh. meaty flavoured spinach is not my idea of a great salad.

    @LucLeFou A roux is fat and flour so he could've done that with the bacon fat and the cornstarch, so I wondered why he had to go the extra step of melting it in water.
