I reckon so. I was thinking 'oven tray bake' as Chetna was cooking. I have to adapt recipes as I can no longer stand for very long, post-Covid infection.
Ground coriander is from seed and fresh is from the leaves. So they taste different. If I don't have coriander in, I use flat leaf parsley. If you miss the citrus flavour in coriander, 1/4-1/2 lemon zest

peanut oil. never used it, can't really source it easily. how important it is? how much of the flavor profile does it have in the finished dish? suggested alternatives? same for coriander, it's stupid expensive here for some reason 😕

Peanut oil is flavourless, so you can swap it for any other flavourless oil of your choice.
