    Here in Canada (and in the States), aubergine is eggplant. Courgette is zucchini. Coriander is cilantro. Who cares, though, all delicious no matter the name.
    Beautiful recipe! Thank you!

      I thought coriander is the dried seeds of the plant while cilantro is the leaves and stem? But yes, all delicious (except the soapy one!)

    Hi! I like aubergine quite a lot. Sometimes I like peeling it when i cook with aubergine.

    I thought "I wonder what happens next" and the answer is, you eat it 🤣It's very simple and as somebody who loves aubergines, I am going to cook it.

    If you can get hold of them, the light purple aubergines are great also. 😊

    Can this be done in the oven

      I reckon so. I was thinking 'oven tray bake' as Chetna was cooking. I have to adapt recipes as I can no longer stand for very long, post-Covid infection.

    Very good recipe. Could you use Coriander powder instead of fresh?

    • @snlarini99
      @snlarini99 3 місяці тому +4

      Ground coriander is from seed and fresh is from the leaves. So they taste different. If I don't have coriander in, I use flat leaf parsley. If you miss the citrus flavour in coriander, 1/4-1/2 lemon zest

      @@snlarini99 what a great idea to substitute coriander this way, thanks a lot! Sometimes it's not available in our stores, but now I have a solution 😊

    peanut oil. never used it, can't really source it easily. how important it is? how much of the flavor profile does it have in the finished dish? suggested alternatives?
    same for coriander, it's stupid expensive here for some reason 😕

    • @angko-pe
      @angko-pe 3 місяці тому +1

      Peanut oil is flavourless, so you can swap it for any other flavourless oil of your choice.

      In one of the answers of the comment of @davidwalters313 someone suggested to substitute coriander with flat leaf parsley and a bit of lemon zest. I think this is a great idea. What do you think?
