Is it because you're usins high quality meat that you don't fear cross contamination? I've just never seen anyone be so nonchalant with touching different raw meats haha everything sounds good though
It’s a small thing, I know, but it’s an important point to note - when unwrapping your meat (or any food for that matter), please don’t drag the wrapper or package it came in over your food. The outside of the package has been open to the elements including hands and fingers that have touched and prodded it before buying the product, during transport, displaying and not to mention the cashier at the end. In short, the outside of the package is not clean.

It has more to do with how smokey you want them since you finish them in the oven :)

In the oven at about 250 until warmed through :)

As I explain in this video, it creates a really nice bark. Always add acidity to your foods :)
