First, I call them smothered. Second, I was born in Colorado, but we have recently moved to Missouri. The Mexican food here is bad, and none of the restaurants have pork green chili / chili Verde. I think it's all canned enchilada sauce. 😝 so when I saw your video, I had to try it! Wow!!!! So good!! Thank you so much for making it!
I moved away from Colorado 😢 green Chile is no where to be found. I am so thankful that I always knew how to make it home made! I am sure many are thankful for your recipe!
New subscriber liking and commenting! I lived in walsenburg for a few years and learned everything green chile. I like yours already. I bought two bushels of hatch green chiles but it stormed causing the roasters to cancel. I sat in front of my gas stove and roasted both bushels in an oklahoma heat wave. Never again lol. I'll binge your videos while I cook😊

I live in a small town about 20 miles S. of Pueblo, Co. We have quite a few resteraunts for a small town, and every single one has sloppers on their menu. To be honest, they are all really great!!
Hi, your pork and green chili recipe looks fantastic! I cook my chili similar to you. Your video popped up on my u tube feed. I'm a new subscriber. I'm also from ABQ New Mexico. As far as Hatch chili is concerned, its great chili, however, other parts of NM grow chili that are great as well. Areas such as Deming NM, Lemitar NM, and Chimayo plus area local growers (I've tried them). What's my point you may ask? I think it has to be great wherever one purchases green chili! I've not tried southern Colorado green chili yet, but I plan too. If you think S. Colorado chili is the best, then, it has to be! I've been to Pueblo CO. a few times and have tried the "sloppers." I think they're great! As far as "heat" is concerned in green or red chili pods, I feel that the veins inside the chili hold the most heat. I'm going to search your videos for other tasty recipes!
So many things I like the Colorado the cast iron pot but picking this video to make my green chili I need an overview with the front a list of ingredients to purchase sorry I couldn't watch it to the end
The skins just slide off; famous words that everyone says, but they never just slide off. Former CO, now in NM, they call it Green Chili stew here, with potatoes for god's sake.
I go through the endless, painstaking effort of removing the skin and seeds from 10 pounds of chili and then I make the sauce. Oddly, when I open a jar the chili seems to have lost much of it's flavor. Perhaps I'll try some lime juice or another preservative. I could buy the *505 Southwestern® Medium Flame Roasted Hatch Valley Green Chile* for $3.29 for 16 ounces but I like just the chili without a sauce too..

Yes on the pueblos! The best green chiles! Pueblo native here. Hatch chiles just aren’t as good.
