I think you need to use the cream cheese and besides in cheesecake it doesn't leave a sour bitter taste and cheesecake is sweet, I recommend adding the cream cheese just to be safe :)

+Gia BaoMinh I would keep the same baking temperature, but reduce the baking time, probably 1 hour, 20 mins or so. Just watch it carefully while it's baking

Hi! Welcome to my channel! You can just use more cream cheese in place of the mascarpone. For the amaretto, you can add a some almond extract or amaretto extract/syrup if you can find it! :)
hello! you could just skip the amaretto or just add some almond extract,it just tastes the same and doesn't make a difference! And for the strong coffee,I add one and half TEASPOON of instant coffee in half a cup of water, tastes divine! Or,you could just follow Tatyana's recipe! hope this helped!

Hmm, make sure to double wrap or even triple wrap the bottom of the pan so water does not seep in! And if it's still raw in the center, just keep baking. I recommend turning the oven temperature down so that the surface doesn't burn, but bake for longer
