@@weeweifun2497 yes u can exclude Gelatin. I couldn't find halal Gelatin near me so I excluded it and it came out great. I also don't like the finger sticks so I alternative that with digestive Biscuits. I bought 2 boxes of digestive biscuits. 1 and a half of the box, I used to first grinded them with butter to make them the layer. I then followed the recipe
I usually bake all fall, winter and early spring then take it to the stable where I board my horse to share the goodies with my fellow stable mates. I stop in summer because I usually cook outdoors to save my air conditioning. What sense is there to putting the oven on when you're trying to cool your home. It can be made one month ahead and left in the moulds in the freezer. It can be taken out of the mould 2 days before you need it and decorated the day before. Keep refrigerated.

Loving these. Will try all of them. But what’s the purpose of gelatin here? Never seen it before. I never used it in cheese cake mixture.
It help them keep their shape when thawed. You can omit if you like but you will need to add more cream cheese to get a firmer mix. About another 125g
