I would love for Dr. Means to address the implications of a low glucose diet on people’s relationship with their culture. I am half Filipino and rice has always been by volume the most consumed food for us. Many of us have extremely healthy grandparents who lived on diets of traditional soups and stews, stir fries, delicious sweet tropical fruits, lots and lots of rice, but lived to be very vigorous into old age.
Many cultures have traditional breads and rices that are the blank canvas for the viand, usually a meat or veggie based stew or soup. They didn’t have the problems we do now. Are carbs really the problem? Have the carbs changed? I’m especially curious about rice based cultures like China, Japan, Korea, Philippines, etc.

YES! A date with a raw pecan stuffed in it is a favorite whole food dessert. Tastes better than pecan pie! God is the best chef!

I love your enthusiasm! Please ignore the comments and unsolicited advice others have left about your voice. You are more than FINE and personally I feel like I am listening to a friend. As an MD, I have been told (frequently because I have a soft but high-pitched Southern accent) to speak louder, lower your voice, changes this/that, etc for lectures and public speaking (never in my Resuscitation bays- my staff just quiets the room, which is nice for all). Our voices are just as POWERFUL in whatever octave, range, accent, tempo, or utterance we use. Folks feel the need to correct/comment on something only if they feel a voice sounds different than what they expect. Which sadly, after 2 decades in the field, I only hear women (not men in medicine) receive such comments. Continue to defy expectation! Someday folks will stop telling us how we should speak and will be accustomed to hearing a wider range of voices. Thank you for your work!

    1. Focus on colorful, nutrient-dense foods rich in micronutrients and antioxidants.
    2. Let the food inspire you through its touch, smell, and color.
    3. Transform comfort foods into low glucose spiking alternatives that still taste great.
    4. Cooking and plating food can be an artistic and creative endeavor.
    5. Consider swaps and alternatives for traditional ingredients (e.g., cauliflower rice, almond flour, coconut flour, jicama wraps, butter lettuce shells, and dark chocolate).
    6. Enjoy the multisensory experience of exploring and learning about new foods at farmers markets.
    7. Aim for a diverse range of colors in your diet to ensure a wide variety of micronutrients and antioxidants.
    8. Engage with and learn from farmers and people at the market.
    9. Certain foods have health-promoting properties that are activated by specific preparation methods (e.g., chopping garlic, pairing tomatoes with olive oil).
    10. Incorporate nutritionally potent spices, such as turmeric, into your diet.
    11. Understand that food can have a profound impact on your body, your microbiome, gene expression, and energy production, ultimately contributing to a happier and healthier life.

I recently stumbled upon you and I love your work. I do wish that you would address (including, explaining away) anti-nutrients and absorbability of plant foods. I am a big veggie lover, but feel like my eyes have been opened a little with the "dark side" of certain veggies. Is there any merit? Do oxalates/etc. cause harm? Do we really absorb the vitamins/minerals in veggies in the same way that we do from animal products? Certainly, there must be some merit to the arguments. Both sides are SO convincing and I am so confused. Perhaps it just doesn't tip the scale? I am so curious!!

What can someone do if they live in a part of the country that doesn’t have a lot of fresh fruits & vegetables? California has a lot of fresh veggies, but not so much in upstate NY…

Thank you again, Dr. Casey. I am not a vegetarian yet. I have been reading about the relationship between animal products and cancers of all kinds. Do you have any concerns in this regard?
BTW I have been suffering with inflammation this year and planted 140 tomato plants this year! Intuitively our bodies know what they need!

Great question! As a general rule, nearly all processed food should be avoided. You can choose minimally processed foods to reduce long and short-term negative health impacts.
We believe that no matter what your values are around food, there are ways to optimize that such that you get the best benefit from the choices you are making 🙏
