Healthy oatmeal cookies/sweet potato cookies

  • Sweet potato oatmeal cookies
    1 1/2cup (375 g )mashed sweet potatoes
    2 cups quick oats
    1/3 cup maple syrup ( use less depending on the sweetness of the potato)
    1 tsp cinnamon
    1/2 tsp salt
    Optional:
    1/2 cup pumpkin seeds ( use other seeds or nuts)
    1/4 cup mini chocolate chips**
    Preheat your oven to 350°F (180°C). Line 2 cookie sheets with parchment paper. Lightly oil the paper with coconut oil. Set aside.
    In a medium bowl, mix the mashed potatoes with salt and maple syrup.Stir in the quick oats , cinnamon and the optional ingredients .
    The cookie batter should be sticky and thick like the video . Adjust the consistency with more oats or sweet potatoes if needed. Scoop one rounded tablespoon of batter on to the greased cookie sheet. Leave about 1/2 inch of space between them. They won’t spread . If you don’t have a scoop like me ,slightly grease your hands with coconut oil and roll into a ball .
    Flatten with a spatula or wet hands.Bake for about 12-14 minutes or until golden brown on the bottom . The cookies should stay moist and soft .
    Let the cookies sit on the cookie sheets for few minutes before transferring to a cooling rack. Enjoy
    ** if using chocolate chip you can just use 1-2 tablespoons of maple syrup and replace 1/4 cup with milk otherwise it’s to sweet in my opinion .
