    En papillote is a cooking method whereby the food is inserted into a folded parcel. Usually made from foil or folded parchment paper. I prefer paper as the fish steams and poaches in its own juices rendering a concentrate of flavours. The parcel is made by folding and overlapping folds of paper sealing the goodness. This recipe has an Asian influence, it's simple to make and quick to cook.

    Hey Joel, I am going to make this tomorrow, I purchased a nice zip-lock bag with 2lbs. of flash frozen Pacific Whiting fillets for believe or not, $3.49, and it's not old stock. Ahh, I can feel the fat burning off of me as we speak! Seriously, eating like this along with the salads we know should do the trick in a couple of weeks, thanks for sharing this lovely dish!

    I like a couple drops of sesame oil on each fillet and rubbed on the surface of the fish before the soy sauce, delicious

      Yes you could, a great cooking method for most fish, the flavour is so much better. (don't eat the garlic)

      It won't taste better without the wine, but you can simply add a little more lemon juice and leave the wine out.

      Barbie Nisa if it is the alcohol in the wine you object to, these days they make some very good non-alcohol wines in white,red,rose, etc... it is just not fermented and works well. Please do not use any type of what they call or label as cooking wine, they are overpriced and i have never tasted one that was any good.have a good day, God bless

    can I use aluminum foil instead of parchment paper?

      You could, but foil is not recommended for health issues as it reacts with acids. Plus it can roast instead of steam. But it definitely works.

      Emz my experience is if you use foil with fish, ican kind of taste a tinny, aluminum,after taste, but with meat like pork bbq ribs, etc...the meat does not tend to take on that metallic/tinny taste.i think its because fish is so porous, that it absorbs the flavor of anything it is cooked with.
