the way the dish looks in the anime, i would assume joichiro separated the egg yolk from the white, placed the white in the pie dough, then the filling on top, then put it in the oven, and a few minutes before taking it out of the oven, he placed the egg yolk in the middle. can't think of another way he could have made the egg white "see-through"

Also from the shot of the anime, it looked like it was more of a crepe pancake style batter coz it has the swirly crust pattern you’d find in crepes when people swirl it around the pan with that “wipe” tool to make it a circle That being said, I’d totally be more than happy to chow down on either coz I *LOVE* breakfast foods

Whenever I cook chicken thighs, if I do not need the skins for the dish I am making, I save them and pop them in the oven with some salt on both sides. Crispy salted chicken skins are almost as good as bacon, and can be used in many places you might add bacon. It is especially a treat if you make chicken salad and just throw it on the sandwich.
I think the Shokugeki no Soma gallette was a fashionable one made not with pie dough, but using a buckwheat flour pancake just folded around the ingredients and never goes in the oven. That's why it's nutty brown and has rounded inside edges.
Well i'm sure 50 peoples already said it But type "galette bretonne" and it's literally the same exact dish, presentation wise so yeah buckwheat crêpe, and it's really angular because the crêpe is a circle (you did cut your pastry as a rectangle instead)
For pastry dough, what about chilling the flour in the freezer? And maybe the butter, but then you'd have to grate it? Maybe separate the egg, use the egg white for the wash and add the yolk to the top of the galette during baking?

I work in the metal industry and we sometimes make these shapes with metal. So start with a round shape and just fold it into a square or rectangle. No overlapping corners.
I don't like mushrooms but I'm gonna make the hell out of this! It looks too good to be food and it's not exactly expensive to make either. Like you don't need special equipment or special ingredients!

Honest question... is galette just a super loose term as far as the dish goes? Because what's shown in Food Wars looks a lot closer to the one that Ethan Chlebowski made in his latest video, which he also called a galette, but used a super loose crepe-like batter to make.
French galette are crepe but with buckwheat flour. Apparently (some) American backeries call all sorts of things galette that usually wouldn't be classified so.

I would not call this a galette unless you want the French to really get mad at you, chef. A galette is a crepe-ish batter made of buckwheat flour, cooked like a crepe then folded into that characteristic shape. The French apparently have an entire galette society dedicated to the purity of the recipe.
@@CHEFPKR I have learned that a lot of recipes get modified in the States for one reason or another (ingredient availability at the time of recipe introduction, maybe?) but aren't "messed up" by it, just different. Seeing that is was Saiba that made it, and what Erina was allowed to eat, I'd say this one is the French version, but it's you doing the reconstruction so xD I was just trying to help save you, the French get notoriously hissy about specifics. So do Italians and the Spanish. Good luck xDD
