    In Jamaica we simply call these "fritters."
    Many households will eat these as is, add codfish, escallions, banana or simply salt and nothing else.

      That's what we call them in the U.S. at least the poor folk, anyway. My mom grew up eating them with ketchup! Glad to hear someone else knows of fritters!

    My children are allergic to dairy and eggs. So I modified a depression-era pancake recipe and now it's my go-to recipe. Much easier than attempting to use egg replacer in other recipes. A depression-era applesauce cake recipe has become my go-to quick bread recipe so one day it's banana bread another day it's pumpkin bread without having to feel like a potions master modifying a recipe too much.

      I didn't think ground flaxseed was that hard to use as an egg replacer. I use it just for the fiber boost, I'm not even allergic to eggs. It's a good binder and you need so little it's cheap.

      J K The ground flaxseed is really good for a binder. Doesn’t work well as an egg replacer if you are look for a fluffy texture or a rise.

    My 92 year old grandmother has Recipes and memories from the great depression. The one that she still makes regularly is called One and One and it is a frozen fruity dessert. I have sent an image of the handwritten recipe to your Instagram.

    When my son was young and we didn't have much money we'd buy the big bags of frozen half dollar pancakes, and eat them sandwiched with peanut butter and jelly. One bag lasted well over a week and back then a big ol' bag was like $1.50 (now they're only about $3.50). Really cheap and tasty quick breakfast with an egg if you've got it 💜

    Yeah, we've been thru 2- or 3-ingredient hard times. When in a pinch flour and water make a lovely unleavened flat bread that you can season with any spice you may happen to have... even if just salt and pepper. Bread, no matter what grain cooked with and whether leavened or unleavened - is certainly the "staff of life". I'm pretty sure there's a type of flatbread for every culture on earth. Humans are very resourceful when we need to be

      Yes! In India we have "flatbreads" in every range of the budget, they can be made with whole wheat or regular flour, or even ground rice and mung beans.

      That unleavened bread has many names. Roti/ Chapati, Lavash, Tartan, Tortilla, Lagana, Pita, Piadina etc.
      It's your basic flatbread enjoyed throughout the world.

      @@lauren8627 You are wrong, ancient wheat and grains used to have loads of protein and were generally far more nutritious. Other grains were also used in addition to wheat. It's why people could actually live off it for a long periods of time.

    Thanks for this Emmy. My Mom used to make grilled cheese sandwiches, even when we couldn't afford cheese or the gas money to stand in line for it. It was just miracle whip between two pieces of toasted bread. She had a great name for them also. She called them toasted nothings...

      One of my best memories of my asshole middle brother is him making me a miracle whip sandwich when I was about 3. It was nice to get positive attention instead of him literally trying to kill me. I actually can't think of another positive moment I've ever had with him in 44 years.

      You make dumpling shells with a humble recipe of flour, salt, and water. Mix ratios and knead until you get the consistency of a supple earlobe, flatten tiny balls of dough, fill with whatever filling you have, close up the dumpling and pan fry/boil/steam them and you have nice delicious comfort food

      @@Call-me-Al would that work with cream cheese? Because there's various flavored cream cheeses you can get. I used them to make cream cheese wontons that I then deep fried.

    I like these "hard times" recipes because they remind me of my grandparents' stories of life during the Depression. These recipes would be great for beginners, since they use minimal ingredients, and no specialized equipment...

      Also great ways to learn to cook. They’re all such basic recipes that they leave room for you to explore different modifications. More complicated recipes are intimidating for beginners, but something as basic as this is easy to experiment with. For this recipe in particular, I’d try maybe filling with lemon curd and marscarpone cheese and rolling it like a cannoli, and dusting with confectioner sugar.

    Mom use to make something like this. But just flour and water. Sugar was used with water and mapleen flavor to make syrup. This was during the 1960s .

    I remember having those when I was a kid in the early '60's. Parents couldn't afford much but Mom did the best she could. When we did have real pancakes (When the money was better), one of the best toppings I ever had was brown sugar spread on the pancake and then lemon juice squeezed over it all. It was so good. I still like making it like that once in awhile.

    Ah! I remember having these. I grew up in a family that didn't have a stable income and later on, no income at all. That, and I made a simple "recipe" for what we called pita bread, but it was more of a.. wierd flatbread. we ditched the sugar and just put flour and water until it reached a thick, plyable consistency, patted them flat, and put them on a fire! They're really good with cinnamon sugar 😋

      My grams used to make hers that way for us grandkids but instead of over a fire she would fry with a little fat and serve them with butter and cinnamon and sugar. Reminds me of elephant ears.

That's what I love about Emmy's hard times episodes. Connecting the community on here even more.     I'm pretty sure we used Bisquick to make our pancakes, but I do remember my dad making "sugar water" to use instead of syrup. I don't remember it being thick, so I think he just boiled up some sugar in water. It tasted good. But anything sweet usually does.

    I’d make these when I’d run out of eggs in grad school. I found a recipe for “vegan crepes” that called for using soy/oat/nut milk but I’d use cows milk or water. I’d fill some with cheese and put butter or powdered sugar on others. Basically whatever I had on hand.

      I just bought some strawberries on sale today to make my famous swedish pancakes (crepes) with cut fresh strawberries rolled up inside of them, topped with powdered sugar. Sooooo gooood! They are fabulous just to eat by themselves even, but the strawberries inside truly make it taste like a gourmet desert. :)
      I also bought some oat milk to make them with haha. I normally used dairy, but I have been trying to make the switch to oat milk since dairy isn’t good for us. I was shocked how good the oat milk tasted too!
      It is just milk, eggs, flour, granulated sugar, and a bit of butter for the crepes! That’s it. :)

    Years ago my mom found a recipe for pancakes using:
    1 egg 🥚
    1 spoonful of peanut butter 🥜
    1 banana 🍌
    They tasted more like pancakes than I had expected. 🥞

      Nathan Asher bananas are highly starchy, and quite sweet. I’ve never tried it, but I bet you could use banana as a substitute for flour and sugar for some more recipes too. I bet it would probably work for cookies too.

    This makes me think of my childhood, we were very “poor” so my mom would make these . She would also make something we started calling mayonnaise bread to go with whatever kind of beans we had. The one thing I still make from back them is pea patties! They are so yummy, everyone I have made them for now eat them the day after they make a pot of black eye peas. I love when you make things like this ! Thank you!

    I did this all the time staying with my broke mother and her broke boyfriend after my relationship broke down and I became homeless. We literally lived on whatever we could find in the yard and buying lizards or random shut off kids at the side of the road at times. I just rummaged around and was like fuck it, flour and sugar will do without any other stuff.

    Emmy, if you get a chef’s ring and use it to make a burger patty from the Mac & cheese then pour the batter into the patty and cook it both sides to bind it together I think it would make a more substantial snack than just placing the M&cheese on the top. Just a simple variation from the UK. Cheery bye and happy eating.

    I was wondering how eggs would be seen as expensive, since during the poor times, a few chickens in the backyard, provided lots of cheap eggs, for the price of chicken feed, and lots of different little things they like to eat, like any worms they come across, such as when your digging plots for your vegetables...
    ...then I realized that that most people don't have chickens...and apartment living people, don't have backyards. 😮😮😮😮

    They look like the usual british style pancake. We in the UK have thin pancakes made with eggs, flour, milk or water. No sugar in the batter. But you add sugar, lemon juice, nutella or golden syrup over them. We also have a thing for tossing them in the frying pan to turn them over, something not everone can do without the pancake folding in the pan or going on an excursion elsewhere in the kitchen instead of back in the pan. We also can use the same batter in the oven to make Yorkshire puddings, which is usually served with a roast meat dinner & gravy although it too can be served as a sweet dish with Golden syrup or jam/jelly. But the thick buttermilk pancakes you have in the sates are not really what we think of as Pancakes, although they are available in the stores more now and the scots have a smaller varient on the US style pancake. Also the trick to making them crispier is really hot pan & grease/oil or butter so the fry in the oil. You can't toss them though if you put a load of oil in the pan. As you'll get hot splattering.

    I've only ever made pancakes with egg, flour and milk. I've never put any kind of raising agent in and certainly no sugar. The batter is very versatile and can be fried into pancakes for sweet or savoury toppings, or roasted in fat to make Yorkshire pudding. Yorkshire pudding is traditionally eaten with roast beef, but can also be eaten with cream and golden syrup. The same batter can be used for toad in the hole and clafoutis.

      Yorkshire puddings with gravy BEFORE the roast beef. I got caught out years ago when at somebody's house (in Yorkshire)and a Yorkshire pud was put in front of me, and then I was offered gravy. No thanks, I thought, I'll wait until I've got my beef and veggies too. Oops, everyone else started tucking in to their Yorkies and gravy and I felt too embarrassed to ask for the gravy having just refused it. I didn't realise that the beef, potatoes, vegetables etc were still to come. It all seemed really weird at the time. My Dad was a Yorkshireman so he should have taught me better!

    Emmy. My grandfather used to make poormans meatballs. My family are Italian American. They had to do this, during the hard times my grandparents and mom and my uncle had to endure during the great depression. The meatballs consisted of eggs, Italian seasoning, and breadcrumbs. He would often serve them either on their own [fried], or fried, then put into tomato sauce. They were delicious!

    Will you please try out the childhood snack that my mom made for myself and my siblings when we were growing up? This was a relatively simple recipe. I am Mexican American so this little snack is reflective of that. Lol.
    My mom called them Banderitas (translation from Spanish to English is “Little Flags.”)
    They were called Banderitas because the different colors of the condiments reminded her of a little flag.
    We often ate these when we were outside playing, and we wanted a hearty little snack that we could run back outside with.
    Recipe for “Banderitas”
    (Little flags)
    1: Flour Tortillas (you don’t necessarily have to make them, but at least purchase from a good Mexican restaurant that knows how to make them right).
    2: 2 medium thick slices of all beef deli sliced bologna.
    3: Mayo, Mustard, Ketchup
    4: Thin sliced cheddar cheese (optional)
    *Instructions:*
    Heat the tortillas on the stovetop. If you have a comal or a pan it will work.
    Put the two cold and fresh slices of bologna on the tortilla and and then add the mayo, mustard and ketchup. Then roll them up like taquitos. The cheese slices are optional. I didn’t eat them with cheese slices too often. Just sometimes. Maybe try both?
    This is my moms snack that she made for us as kids. Now that my siblings and I are all grown up, a couple of us still enjoy the occasional Banderita.

    Growing up we made crepes with one cup of flour, one egg and one cup of milk. When you double the recipe we always added a tablespoon of sugar and no one in my family knows why lol. Now that I'm an adult I realize how cheap those crepes were.

    In Hawaii we call it " Hawaiian pancakes!" We used less sugar in our recipe, only 1/3 of a cup. My mom also went by "feel" on thickness of batter. She served them with Guava jelly. I never really liked any kind of pancakes, even those. But now being older, I actually crave them from time to time. Mom is gone, so when I make em it don't taste the same.     My grandmother taught me lately how to make Blini (eastern European "carpe", although these came from eastern Europe), but in a vegan version (the secret ingredient is carrot juice). They are somewhat similar to crepes... but also to this recipe. A cool trick she uses is to put the access oil from the pan to the batter and mix well. I can drop here the recipe if anyone is interested.

      Ok.
      Mix in a bowl:
      - Around 30 ml carrot juice (juice from 1 carrot)
      -150 ml plant based milk, but water or orange juice. can work as well.
      - 4 full tbs of flour
      1.5 tbs oil
      0.5 ts salt
      1-2 ts sugar
      1 Ts of baking powder (optional)
      Add plant milk till you get liquid consistency, because you want crapes, not pancakes.
      Let the mix rest for 15 mins.
      In a frying pan heat some oil, and drain the access to the blini batter, and mix well. If needed, add more plant milk, because the consistency may change after 15 minutes due to food chemistry.
      Spill some of the better in the pan in a thin layer. When the upper layer looks dry, flip the blin.
      Fry till the lower side is golden.

    Man, it's funny how differently everyone views pancake standards. These look a smidge thicker than Swedish pancakes (and way thicker than crêpes). Swedish pancakes also never contain sugar in the batter, so I guess our version of this would be just flour and water, kind of like homemade papier-mâché glue.

    I imagine these would be phenomenal with the addition of a little vanilla extract! It is also nice to see someone else who likes peanut butter on their pancakes... that goes well with pancake syrup, too, but I'm gonna have to try it with raspberry preserves next time I do something like this.

    Back in the day, when canned corned beef was still poor people food, my mom would sauté some onion, stir in the beef, some chili, then add a can of kidney beans &serve over rice. Poor people's chili con carne. I get cravings for it every now & then.

    So fun fact I'm from Barbados and we call these "bakes" and we fry these in oil. They're alot thicker but crisp on the outside and very chewy and sweet on the inside. I make mine with flour, sugar, evaporated milk and water but most people omit the milk but I think it adds a great flavour and something different😊 oh and the batter is a little thicker too

    Hey Emmy. Love all you do! When I was a little girl In the early 60's our sweet treat was sweetened condensed milk on bread. We were a large family with little money. My dad would also put sugar in seltzer water and tell us it was cream soda. I'm guessing it was a cheaper way to give us 8 kids another treat. 😊

    In the 90s, my mom made what she called “poor man’s hamburger helper” which was a box of Kraft macaroni and cheese with a half pound of cooked and crumbled ground beef. She made this when Kraft would go on sale for 10/$1 because actual Hamburger Helper never went on that low of a sale. Ground beef was much cheaper than it is now.
    She made “poor man’s jambalaya” which wasn’t authentic at all but I still make it. 1 sausage link (10-12 ounces) sliced and fried in a pan. 1 can of chili beans poured over. Served over white rice. Simple and cheap and filling.
    And finally, she made “poor man’s shepherd’s pie” which was cooked and crumbled ground beef. A can of sweet peas (drained) mixed in. She would put that in a casserole dish and top with homemade mashed potatoes and bake until crispy on top. Or we would just put the potatoes in a bowl and add the beef and peas over (when she was too tired to wait for the oven). My dad and us kids always put ketchup on it.
    She was an excellent budgeter and couponer and kept us pretty well-fed on a really, really tight budget. Especially considering my dad being a super picky eater.

    I have a " hard time" recipe for you to try. Ammonia Cookies! They are made using ammonium carbonate (also known as Hartshorn, or in German it's pronounced hirschhornsalz) as the levening agent. I have a package of the hirschhornsalz I can mail you, along with the handwritten recipe from my grandmother. She wrote the recipe down for me over 30 years ago (she's been gone 20 years) and sent it to me along with a beautiful letter explaining how she remembered making these with her German grandmother in an old cast iron stove. These cookies are a MUST at Christmas! They do bake off an ammonia smell, but turn out with a flaky texture. They are reminiscent of z snickerdoodle, as they are sprinkled with cinnamon and sugar before baking. I'd love to share these family favorites with you.     If you cut the sugar back much you'd start affecting the texture. More rubber less crisp.

      Maybe that's why potato pancakes work because the potato starch crisps up?

    You can add some chopped up fruits or some left over sausage. This is really good for like a blank canvas and you just put some toppings.

    Those pancakes look wonderful derf il, I love how thin they are and you can easily make crepes with them and add awesome fillings inside.
