    I made this today and thoroughly enjoyed it. It took some will power not to gobble up the whole thing.     This is very similar to an even better kale salad recipe I have used, using “massaged” lacinato kale (it’s more tender), and freshly thin-sliced fennel. The dressing is the similar, only it adds freshly grated garlic, EVOO, and Reggiano Parmesan cheese. Stellar.

    Excellent. I mix olive oil, lemon juice and some honey together, I really like the taste. A bit less olives than in the video (I did read somewhere that 6 olives were already a lot for 1 person), salted peanuts in the grinder. Thanks, very good !

    I have been preparing this Kale Salad since I first watched this video a few years back...
    My Nutritionist said that I was not absorbing the nutrients from the raw foods... for this reason, I steam the Kale... Steaming the Kale makes it so much tender and tastier...
    I TOTALLY LOVE this Salad...
    I prepare a HUGE Bag of Kale and I eat the salad throughout the week...
    Today, I watched the video again... just to REFRESH my memory...
    This is the FIRST TIME that I heard that the recipe includes GARLIC...
    Perhaps... this is because I tend to be More Visual and I this time , I was making the salad as I was listening...
    I had to rewind / rewatch the video... as I heard about the garlic and ACTUALLY he NEVER adds it to the salad...
    It will be My first time to add a little garlic and some nuts...
    I had ALSO missed Hearing about the nuts...
    ENJOY...!!!

    Since I do not have currants, I substitute with a Mix of Craisins & Raisins ...
    I use Green Olives instead of the Black ones...

    For those concerned about eating raw kale, doesn't the massaging and lemon effectively wilt (cook) the kale enough to equal light steaming?

    Looks delicious and there's allot of nutrients in there. My only issue is that after you add the 1/4 cup olive oil, pine nuts and currants, you've just added 1400 calories to an otherwise 30 calorie veggie. Maybe consider steaming the kale and alternatives to 500 calories worth of oil and nuts.... Anyone on a diet should not consider this salad recipe.

    On top of everything you did.... Ad some organic red kidney beans, and some organic black grapes to it..
    Oh, and as well as olive oil, ad a little organic balsamic vinegar as well. And try it.

      +Nhi Linh Nguyen super easy to grow at home, if you can find a farmer's market that sells it, or get some seed to do at home. It is a very hardy plant. Our comes back every year after the winter (for three years now).
