  • It's time to #levelupyourleftovers again. This week I'll show you how to take the #hotforfood #lasagna soup from my debut cookbook Vegan Comfort Classics: 101 Recipes to Feed Your Face and turn it back into a beef & cheese rosé lasagna... AND then use the rosé sauce to make a creamier version of the leftover soup too! It's levelled up leftovers for days 🥳
REMEMBER to leave your comments below of other #hotforfood recipes you want to level up!

I’m amazed every time. You took this disassembled lasagna soup and made it into a lasagna and then had ingredients left to make an improved soup. 11/10 for creativity 12/10 for preventing food waste!

I find that when vegan cheeses don’t melt on top of something like pizza or lasagna I just put olive oil on top (could even mix the cheese with some olive oil) and the fat in the oil helps it melt

@@aliceis9068 What I try to do is put the cheese under a lawyer of the food. Like maybe most of the casserole in the pan minus an inch or so, then cheese, then the remainder of the casserole. It melts great that way, and when spooned out it's still stretchy and gooey.

I literally reuse my leftovers even 3-4 times sometimes LOL it might sound gross to some people I guess but not only they always turn out great, that's actually the beauty and the fun of cooking! and that way I never get to throw away anything since I hate food waste so much! :) I love this!

Lauren, I am subscribed to SO many vegan cooking channels and, without a doubt, your videos have leveled up my cooking more than any of them. I'm so much more creative when making sauces and dressings now, and you've encouraged me to experiment more and think outside the box. Even my husband has commented on how impressed he is when I just "throw something together." THANK YOU! I just adore your content and get so excited for your new videos. Not sure that "level up your leftovers" will be as successful as your other ideas.
It is already difficult enough to convince your viewers to make your recipes (which, due to veganism, are more ingredient complicated and lengthy), but convincing them to make your recipes and then follow along to make complicated left overs into something else is going to be difficult. The thing about being vegan is, left overs are left overs for a reason - why would we take so long to create something delicious, and then make the leftovers complicated too? Love your videos but can't get behind putting more time and energy into the vegan recipe I've already created, (almost like anti food prepping, and who has time for that?)
