- MY VIRAL SOUTHERN STYLE MAC N CHEESE BUT THIS TIME NO VELVEETA
16 oz elbow macaroni, cooked (or other tubular pasta)
1 tbsp extra virgin olive oil
2 cubes chicken flavored bouillon (Maggie)
4 tbsp butter melted
3 tbs all purpose flour
2 cups evaporated milk
1 8oz block mild cheddar cheese shredded
1 8oz block mozzarella cheese
2 8oz blocks Colby jack cheese
1 tsp salt
1/2 tsp black pepper
1 tsp Paprika
1 tsp Cheyenne
2 teaspoons garlic powder
2 teaspoons onion powder
1 tbs and 2 tsp Badia complete seasoning
Instructions
Preheat oven to 350F. Lightly grease a 13 x 9 baking dish and set aside. shred cheese blocks and combine in a large bowl and set aside.
Cook the pasta one minute shy of al dente according to the package instructions. Remove from heat, drain, and place in a large bowl.
Drizzle pasta with butter and stir to coat pasta. Set aside to cool while preparing cheese sauce.
Melt butter in a deep saucepan, dutch oven, or stock pot.
Whisk in flour over medium heat and continue whisking for about 1 minute until bubbly and golden.
Gradually whisk in the milk until nice and smooth. Continue whisking until you see bubbles on the surface and then continue cooking and whisking for another 2 minutes. Whisk in salt, pepper, garlic powder, onion powder, paprika, Cheyenne, and badia complete seasoning.
Add half of the shredded cheese and whisk until smooth.
Sauce should be nice and thick.
Stir in the cooled pasta until combined and pasta is fully coated with the cheese sauce.
Pour half of the mac and cheese into the prepared baking dish. Top with some of the remaining shredded cheese and then the remaining mac and cheese. Top with remaining shredded cheese.
Sprinkle paprika over the top and bake in the middle rack until bubbly and golden brown, about 30 minutes. Serve immediately.

Another winner! Thanks for this variation! I like the velveeta but it’s good to have this as an alternative. Both work!
I hate recipe and cook snobs . If you watch a recipe you can add what you like or substitute/ remove what you don’t like. You don’t have to bash someone . Just learn their techniques. For example, I like my mac and cheese seasoned with salt and pepper only, but I am not gonna bash someone that uses seasonings in their mac. Every mac and cheese video people arguing about egg or no egg, Velveeta for no Velveeta , roux or custard, etc. Do what you and your family likes.
