How do you do a ppm / e.c run off test if you don’t water from top ?
You don't. This isn't necessarily a better way to feed, but a more convenient way.
Is it safe to overfill and have plants sat in water for a few hours until its absorbed/evaporated? Obviously would sit them in it too long as it'll starve roots of oxygen and kill plant, but is a few hours ok?

Hi I've got the easy feed system I just wanted to know my resvoir pH is 5.8 but when I pH trays there over the pH limit what could be causing this
Evaporation maybe leaving a stronger solution
would this work with a clay pebble / seramis soil only?

As this is a bottom feed system there is no waste. For a run to waste system use ALIEN® RAIN™.
Just grow with Autopot. Much simpler and more efficient.
your wrong there as both Autopot and easyfeed are very very good with easyfeed being a more advanced system with less worry of feed pipe clogging up as the easyfeed pipes are a lot bigger
