Should one prioritise the Salewa Mountain Trainer Lite shoe over this one if he/she is going to carry a relatively heavy backpack on technical terrains, like boulder fields, over moraine and scree fields etc.?
The Pedroc PTX is ideal for fast-and-light hiking, so for technical trekking with weight like you've described, the Mountain Trainer Lite would be a great option!

Collar height is a personal preference, really. Some folks don't like the ankle height and others don't hike without it. It's really going to be mostly what you're used to and find comfortable!
