In my opinion everything is cuter when it’s miniature. Every year my hubby requests a pineapple upside down cake for his birthday, but this year he wanted to change it up a bit and have mini cakes instead. Here is how I made them.

I love pineapple upside down cake. It's my favorite cake. I love these mini cakes, too. I think I would put the butter and brown sugar in the cakes without the pineapple. This is the first of your videos that I have seen and I'm so very glad I watched. You are a very good instructor and have such a pleasent sound in your voice. I have made pineapple upside down cake many times (it is our pastor's favorite, along with peach upside down cake 😊). I like the idea of the miniature cakes, especially for on the go snacks! Thanks these were so good. I don't have an oven in Japan. I put them in tins and did on stovetop with steam method (tins surrounded by water). I covered each tin tightly with oil. Started at 1 out of 8 heat on my induction stove. After it warmed up I moved to level 3 and let it simmer and it was done in maybe 10 minutes.
You are so welcome. That's so clever, I've never tried making them on the stovetop. I'm so glad you found a way to make them without an oven. I'm impressed 👏❤️

I like that the cakes did not come out of the pans perfectly. Viewers will likely have some of the same results, and it's nice to know that experienced people also go through the same things they do. Running a plastic knife around the edges is a good suggestion. If I made these, I would put a teaspoon of solid butter in each well and put the pans in a heated oven for a minute or two to melt the butter thus saving me a step in the process. What I would do a bit differently is to put butter and sugar in the wells without pineapple and add different fruit or possibly nuts. I use silicone baking cups and like them very much. Rarely does anything stick, and if the contents are reluctant to release, I can push on the flexible bottom to help them along. Also, I have never seen maraschino cherries spoil in the refrigerator, even if they get pushed to the back and are forgotten for a couple of years.

I freeze my extra leftover pineapple to use for other recipes. Never had a problem. I dont eat pineapple myself as im diabetic😢. However, i do like to have a little of what make, a spoonful or a small slice. Also, you should talk about your Amazon store at least nention it now and then. People want to know.😊
Also if you add a can of coconut milk with that pineapple juice according to recipe measurements it becomes a pina colada upsidedown pineapple cake yummy
@@CookingwithShirani I did it one time but I made it a coconut pineapple tres leche cake so technically a pina colada tres leches because with the pineapple and the cherries still on top I used extra coconut milk to soak it in, it was pretty good I made it a little too sweet though I had used box pineapple upside down cake mix when I should have tried making it from scratch so I could control the sugar since I'm adding a can of creamy coconut milk and using the pineapple juice instead of water but it was still delicious lol I even sprinkled toasted coconut on the top

How do you store? Length of days to store can you freeze?
I individually wrap each one in plastic wrap and put in a ziploc bag and freeze it. It stays fresh for 3 months, but mine never last that long lol.
