Dissolve the coffee in cool water then add the hot water. Let it sit for a couple of minutes, stir THEN drink. Try two cups, one made with just hot boiling water and another made the above way. I believe you will find a large difference. Was taught this by some expert instant coffee makers from Mexico.
I liked the comment about SBUX Via in the Wirecutter story: “Its burnt rubber aroma is so overwhelming-it tastes like coffee that’s been sitting in a glass carafe for hours and has boiled beyond recognition.” Most Starbucks coffee has beans roasted to the point that they are burnt. Many people who doctor their coffee with milk and sugars and such see it as tasty, because the burnt flavor is what makes it through all the other junk. If you drink regular coffee for the flavor of coffee, you don't want it having that burnt rubber taste.
An instant coffee brand I like: UCC The Blend Sumiyaki. (I also agree that future tests should include brewed coffee. It's possible that the testers were unintentionally biased since they knew all the coffees would be instant and they expressed dislike for instant before the test began.)
Nescafe Clasico is the best instant coffee out there I drink it daily it smells like coffee tastes like coffee and hits all the notes being single lazy and not wanting to deal with a machine or press I find Instant coffee to be simple quick and I like being able to control the strength of my coffee, besides the Cup the only thing that gets dirty is a spoon.
You used three biased and pretentious people who know nothing about instant coffee to test instant coffee. Sounds legit. Try testing on the public in future, you'll get an accurate result.

Please try Mount Hagen Organic Freeze Dried Instant Coffee. It’s the best.
