Happy 4th, now usually you will not see so thin knives selling unless you are profesionall and know how to use em, as far as I know kitchen knives so thin are meant for Japan market while west world prefers thicker santoku type knives. Niec strop BTW, I make my own strops out of really thin leather and my kitchen cheapo knife from fiskars with 53 RHC did not hit stone in over 8 months now, daily use ofc ;). Gotta try making strop with glas, anyways enjoy and celebrate. Cheers from Sweden
the handle is palisander pakkawood i got that same knife its a good knife and i have chop'd throw bone with it no problem... btw i love to see you got good kitchen knifes so many knife guys out there will spend $500 on folder and then still use $20 crap knifes in the kitchen and i dont get it....

That Miyabi 6000mct is an excellent knife. I cook professionally and it's why go-to knife when cooking on the line. Very nicely balanced.
Yes, flooding down here in Panama city as well. Would have been nice to have that strop today while I was triming up so fresh deer meat.

I use my SG2 Junkyard Dog for kitchen use all the time. Its a great slicer and holds an incredible edge.
