I made vegan ricotta a few days ago and used some of it to make a pizza. It tastes ok, but it DOESN’T MELT! I’ve looked at lots of vegan ricotta recipes on YT and the issue of melting is never mentioned. Part of the reason for cheese in a baked dish is the texture imparted by melting. Going forward, I’ll use tofu ricotta as a spread, but not in dishes where melting is needed.

I make your tofu ricotta at least once a week since seeing it in your best lasagna ever with spinach and butternut squash. It’s the best!

Unfortunately there’s no sub for this recipe. I’d recommend searching for one made out of almonds or cashews!
They sell soy free tofu.but i dont know how well it will go with the recipe.
