Here's an idea. We know there was Vulcans on their ship so they have interstellar travel but if they don't have warp drive then maybe they don't have subspace meaning time dilation is a thing so you know they have clearly travelled around fast and far enough to pick up people from different species but with time dilation that would explain why people who appear to be much older for our timeline are still around but younger!
The Galaxy moves so you can time travel until a planet catches up to you - then sit on the planet and ride it until it is close to another than keep using stellar progression and time travel to get around.
Just because their reality didn't invent warp, doesn't mean the Beagle obtained it from one of the other quantum realities? also, love to see the Beagle in STO

Oh, and I'm tired of big giant universe ending plots. It's just so over the top. Over and over. Super fun episode though! LOL Guys, stop trying to rationalize ages and ship tech. They're all from ALTERNATE universes. So it doesn't matter. They could have been developed 50 years LATER in Lily's universe.

Cochrane invented the Spore Drive in that universe. That's what Discovery did they could travel to anywhere and other Universes.
Having an NX-class or "known" design would spoil the reveal too early
