The dueling violins in his Live at the Acropolis video is PHENOMENAL! I definitely recommend that one. Those two are so in sync if you aren't watching it and only listening you can't tell where one stops and the other begins.
The bow causes the strings to vibrate and the different notes are created through various fingerings, "like a guitar" as you would say, as in, if you pluck a string that would created a note as wellm the bow causes a unique style of vibration which is why bowing vs plucking sound very different

Violin has no frets (the little brass bars that create the tones) as the guitar has (base/electric/acoustic). A violinist has to know EXACTLY where to press a string to get a certain note without help. Much more complicated than a guitar (complicated enough for me).
Too bad you reacted to the cut version, you missed a very impressive Cello on the beginning, but TBH the dueling violins are what is most astonishing of this song
