  • Today's recipe is an Applewood Smoked Turkey in the Bradley Smoker with a Maple-Bourbon Glaze. And, I'm doing a GIVEAWAY - Signature BBQ Rub and a Logo T-Shirt!
    I'll start with showing you how to dry brine, then we will season the turkey the next day and smoke it with applewood. The final step is glazing with the Maple-Bourbon glaze.

    For 2021? Wouldn't mind seeing a pork loin loaded up with cream cheese and jalapeno peppers. With the loin wrapped in bacon. That Turkey looked really good. Doing ours this year on the pellet smoker. I've always done it on the stick burner.

    Gonna do my first smoke turkey this thanksgiving with this recipe. Wish me luck. I would love to see a smoked brisket.I have never done one and I am very nervous about doing one. I know they can be very difficult. I have a masterbuilt smoker.

    Love that Bradley smoker a odd request for 2021 is chicken livers I think your style of cooking with a little spicer than others would be awesome plus I have not seen anyone do this style of cook on a smoker

      Gotta be honest Anthony. My Grandma used to make liver and onions. Both my Mom and Dad like chicken livers, but I can't stand any kind of liver...something about eating a filter 😃.

    My wife and i are not into leftovers much. When we host large gatherings we usually send themhomw with our guests. What we would like to see you do are Cornish Game Hens. I have been having them come out on the dry side.

    I have a few things I am curious about:
    1. Smoked Calamari
    2. Smoked Deer, Bison or any game meat
    3. Smoked into Jerky the previous 2
    4. Grapes & Blue Berries Smoked into Raisins, then used in Muffins
    5. a BBQ sauce using Carolina Reapers & Exotic fruit, like Lucuma or Custard Apples, to create a Sweet-Spicy, possible sour, sauce to put on BBQ, or smoked, meats

      Cochrane is a long way north. You must’ve travelled Hwy 11 north from North Bay. It’s a long haul.

    So just got the Bradley digital smoker a few weeks ago. Omg I love this thing. Xmas I tomorrow and doing a 15lbs turkey. If I don't have the duck fat spray or anything what would be the suggestion. Thanx for the vid and merry Xmas

    Okay Jeff, we saw it your way, now let's try it my way... Wet brine for 3 days, honey, Madeira wine, brine. Fortunately you have the new Bradley smoker, you can load yours up for 10 hours, (mine only goes for 8 hours) and this is important because you have to cold smoke it for 48 hours, (that's under a 100°) preferably with pecan wood....... Then you get to cook it. And I definitely agree with the mustard because the way I make it you use a mustard and flour paste, bake that on at about 500 degrees. Drop the temperature to 350, and baste the turkey every 15 minutes, (set your phone alarm and get your friends to help) till it's done. When it's finished it's going to look like it's ruined. That mustard coat turns black, but you kind of poke at it with a fork, and it flakes away, and there's this gorgeous mahogany bird underneath. Stick it with a fork and the juice will hit you in the eye. Yeah I know, it takes a while............= )

      @@Armadillopepper The Madeira wine is actually classified as a desert I think, it's so sweet you can't hardly stand it, but it works really really good with red meat sauce, like in a lasagna. It's very popular in French and Italian cuisines. It's from the isle of Madeira hence the name. = )

    I would love to see a smoked cheesecake recipe. if you can smoke cheese and you can bake a cake in a smoker... you should be able to smoke a cheesecake.

    Can I use the dry brine and duck fat coating in my Big Easy? What rub would be best?

      Most definitely. In the Big Easy Oil-less Fyer, use a low sugar content seasoning or the outside will burn before it's cooked. You can make your own or we have a few on our website.

    Did you start smoking the turkey at 275 ? And then how long did you let the turkey smoke at 320 to crisp the skin ?

      2 hours at 274, then the remainder of the cook at 325. I think that was about 2 more hours.

    Why wouldn’t you have had the smoke on for the whole cook time?

      Because the protein will only take on smoke for 2-3 hours. After that it won't absorb any more noticeable smoke.

    It’s getting cold where I am around 35-40 degrees and I can only get my smoker to hold at 200 degrees max. Its a vertical propane pitboss. Any suggestions? Or do I get a new smoker. 😀

      I've never used a propane smoker, but I do have the propane Big Easy Oil-less fryer and it is difficult to get the temp up in really cold weather. New smoker!!!😁😆😅

    The Turkey looks fantastic Jeff. I really like that glaze. Since you are in Florida I would like to see you cook up some gator meat. Make it nice and spicy

    I have two questions. First, is this the recipe you'll be cooking for your friends and family this Thanksgiving? Secondly, am I invited? As far as recipes, how about a meatlover's pizza using bbq leftovers; with just a kiss of smoke. I think you may have a pellet smoker that is up to the task.

      I like that pizza idea Ken. Haven't made one in al long time. This turkey was definitely good, but Im thinking about making a Cajun injected turkey for Thanksgiving. Who knows? May make this one also 😀.

      @@Armadillopepper I just watched one of the older videos after I commented. I was thinking maybe brisket, sausage, pork belly, and ham, or something like that. I accidently made a thick ribeye too salty the other day by adding a coffee rub (containing salt) after I had dry-brined. I thought using that later on a pizza might be a good use for it, and tame the salt.
