    I have a question..
    The other night I had Tannat ( Garzon ) and I noticed on the second day that it was much more expressive,all the flavors were turned up a notch,it made me wish I had just opened it and stuck it back in the fridge..
    Anyway,often I notice that wine ( I almost always drink reds) often loses a little after a night in the fridge,the flavors get turned down a notch.. why with the tannat do the flavors get turned up?
    I know that the difference is oxidation but why the positive affect on one wine and negative on another?
    Is it the tannins?

      Probably the reason is not even Tannat. Maybe this particular wine suffered reduction and needed more time and oxygen to open up. Anyway bold reds need a bit more time to aerate than light reds or whites so it also might be the case.

      @@GarryTheSommelier it is incredibly fascinating to me how one red can be muted by 24 hours in the fridge,while another shows no affect and still another is slightly enhanced..
      Folks get into wine for all sorts of reasons but for me,I was drawn in ( about 18 months ago ) by the science of it..
