Hatch chiles are grown in the Hatch Valley region of New Mexico. They're almost a state religion. New Mexico has declared the official state question to be "Red or green?", which means "Do you want red or green chile sauce on your food?" The official answer is "Christmas," which means "both."
But the right answer depends on what you’re eating. Chicken enchiladas; green. Cheese enchiladas; red with an egg. And there’s a monster difference between Northern New Mexico Red Chile and Southern New Mexico Red Chile. You’re right about the religion part, we take this stuff seriously!😂😂
I was born in New Mexico, and I've lived here all my life. (I now live about 40 miles south of Hatch.) Green chile is a STAPLE food here - but you can only get it for about six weeks out of the year. The different varieties range in heat levels. Last month, we bought 50 lbs. to roast and freeze. (Many New Mexicans have a separate freezer JUST for green chile.)
They are truly the great fruit of NM. We can now get them in N. Idaho now (yes, the fresh). I roast them and make stuffed, breaded chile Rellenos. Thx NM.
Thank you so much for this video. We’re sitting here in Tampa, Florida waiting for the hurricane to hit us being slammed by winds and rain. The thing that’s making us happy and laugh is your video. Thank you so much.
Paddy has been around since the very beginning on these shoots, so he's seen and experienced it all. But that expression at 9:31 he looks genuinely taken by surprise
In New Mexico and Colorado, it's pretty important to distinguish between chile and chili on menus, especially for people whose stomachs cannot handle the green pork chili that's popular in that part of the country and might confuse it on the menu for some kind of verde sauce on pork as opposed to an extremely spicy hot greasy soup that can coat your mouth in fire and send you to the bathroom every twenty minutes for the rest of your day. And of course, if you're making a chili and you accidentally grab your chile powder, you're gonna end up with something that maybe tastes a little under seasoned.
@@tacosavings9751 I think Colorado is just trying to capitalize on “Green Chile” because Hatch Green Chile is so popular but in New Mexico we put Chile on pretty much everything, that can include Chile as a sauce both red and green or chopped green chile. You can get any Heat level from Medium to XXX Hot Chile its still all green chile. Red Chile is the same Chile just allowed to ripped to red and then dried to make a powder our cooked as pods then usually blended for a smoother texture.
@@alexrodgers9247New Mexico was a Spanish settlement which is where it gets its name now. The Chile though is Native to the region and the Natives used Chile. Also New Mexico isn’t Mexico. They have different native varieties they use in Mexican Food.

I am not most people, and have eaten multiple kilograms of Carolina Reaper powder in my lifetime. I would love to dare them to try to eat something I cook, but I am pretty sure I'd need to have them sign a waiver first. Unlike some of those spicy challenge waivers, the purpose of the waiver would not be to bluff them into thinking it's going to be spicy. I literally could not properly describe to you how spicy it'd be: you simply could not imagine or believe that anything could actually _be_ that spicy. I would describe it to you not as an eating food experience but more like a being pepper sprayed experience. And by that, I mean one... small... bite. Very few people on the planet would go in for a second taste.

Awesome. I've seen so many spicy hot food challenges on Try, and this might be the first non-one chip style challenge that actually hit the hot meters of all the Tryers...in most other hot food/sauce challenges, there's always one or two tryers that just aren't effected or just weren't blown away by the heat. I know you can learn to eat spicy food over time, but videos like this make it pretty clear that some people are physically different when it comes to spicy food. They just don't feel it like the rest of us do. I like some spicy heat in my food, but I'm limited by the fact that I start hiccuping uncontrollably when I have anything around the habanero level or above. My diaphragm goes into convulsions before my tongue is ready to give up!
I just can't get over the fact that they are having such a reaction to entry level spicy. Pepper X but you grilled the pepper with the seeds in and then eat it. Now that is a kick in the balls.
