Ingredients:
COFFEE GRANITA
Granita
2 cups Grady’s, chilled
3 tablespoons demerara sugar (heated until dissolved in ¼ cup grady’s)
Cream
8 ounces heavy cream
4 ounces mascarpone
Pinch of salt
½ teaspoon vanilla extract
2 tablespoons confectioners’ sugar

I remember when I was a kid watching Giada De Laurent’s make this and couldn’t remember for the life of me what she called it. I’ve been looking for this recipe off and on for 15 years 🤣🤣🤣
I really appreciate when people include these parts in their videos where something goes wrong. Sometimes your ingredients/tools/whatever work against you, and you just have to make it work or start that part over. We've all been there, but it's comforting to know that even professionals deal with it and it's helpful to see what they do.
If I can give you some advice as an Italian, I recommend that you first prepare a syrup of water and sugar to which you add the coffee. When summer comes, I often make a granita that should be creamy, velvety and soft.
If you want to follow this advice, dissolve 200g of sugar and a pinch of salt in 500ml of water and boil for eight minutes, then add 500ml of coffee and let it cool. When it is cold, pour it into a container and leave it in the freezer for 7-8 hours, during this time for the perfect success of the granita, break the ice crystals three times as soon as you see them. You can use a fork, but use the immersion mixer which allows you to obtain a creamy mixture.

Claire, I think this started to approximate my enjoyment of gourmet makes in large part because there was a failure. I find it calming to watch you cope with challenges with your trademark humor and ingenuity, and I find it less enjoyable to see everything go perfectly. 😂 😘

I feel like at some point in gourmet makes, things were intentionally going wrong for her though and that was less enjoyable. There's a fine line between watching her work through problems and gaining insight on how to fix it, vs, just watching her struggle because we are sadistic.
I love watching Claire make just about anything, and to discover a shared love of all things coffee and all things fruit based only heightens the delight. Mmmm, that granita!
As an Italian in love this recipe!!! My go to flavour is mint and lemon granita … mixed together … or cola flavour when I was younger … but in Milan you get it for a snack like instead of gelato you get a granita … basically the slurpies at the gas station in usa

I literally could watch Claire all day. I really wish I could think like see does. She is so logical but brings some much of herself to the process. The honesty and transparency about what she is thinking and her anxities is awesome.

Today I wanted to see her delight again, but noticed that she seemed teary after the first whipped cream mishap, and every time she mentioned the cream.
I feel so protective of Claire, and empathetic because I’ve cried when frustrated, more than when sad. I want to just say thank you, Claire, for all your work. Don’t forget to rest, you are a perfectionist and put a lot of pressure on yourself.
I’m again glad to see you enjoy the treat at the end. This time, I’m relieved to see her laugh.

Coffee crystals… more precious than gold 💎 Yet another reason to be able to have coffee morning, noon and night 🤤 Hey Claire, my fridge does the same thing. I have to be careful what I put near the back. The past 2 times I bought local heavy whipping cream it was super lumpy and looked curdled. It wasn’t expired or have that sour smell and I wasn’t sure if I should use it. We ended up using it and it worked perfectly! This recipe will be a hit in my household ❤️

I'm so Psyched for this recipe. I also love coffee desserts so much that I think I've made the Coffee Coffee Cake the most (Maybe 2nd to Poppy Seed Almond Cake). My sister always request it and we have it for breakfast. Now we have something to cool our hot summer afternoon. I hope there's more coffee dessert recipes in the next book.

You need to visit Italy. My Italian mother would never make whip cream that way and she certainly wouldn’t make granita the way you did. I guess we learned differently. I’m sure it’s good though! There’s an Italian expression that basically says what you put in is what you get out. So good ingredients you can’t go wrong! You should try my mom’s Granita!
I prefer to make the coffee with a fair amount of sugar, because then it doesn't freeze solid into an icy watery block; as another commenter said, the high sugar content helps achieve a soft creamy texture. To offset the sweetness, plain unsweetened whipped cream is the PERFECT complement.

Try it, don't overthink it. I would say that the whipped cream would go great.
