I found out that the snow skin got harden , dry and not sticky anymore after 2 days in the freezer. Do you have the same problem? And do you know how to solve that?
If it is in the freezer, seal properly. Should not have the problem. When you take out, leave at room temperature 10-20min, it should be back to normal.

Using glove to knead is easier. You are right. Is your snow skin still hot when you wrap ice cream? It should be completely cool down. The way I do it is, I leave the ice cream in the freezer, when I do it, I take it. One by one (that mean I will keep opening my freezer door, I don't leave ice cream outside, esp if the room temperature is warm).

Try not to touch it with your hand. If you see my video, the ice cream was in cling wrap and I put the snow skin directly onto the ice cream and warp it. All the way through, my hand never touch the ice cream. Maybe try again

From the comments it seems everyone else had many issues as well. Hope the author fixes it as they come out nice in the video, but I had to completely toss everything despite following all tips in video and in the comments.

Emilee's Kitchen 愛米丽厨房 before i saw yours, there is one using the same ingredient as yours. it turn up very sticky. i will try to use your method and the amount of ingredients.
We keep in the frozen area . It will he hard. Before you eat, you need to defrost little bit, maybe 5 to 15 min depend on the weather, , it will be soften.
Take ice cream out from freezer room one at a time. Otherwise, it is true quite difficult to maintain it solid. Once wrap, again, put back into the freezer.
This is a very tough question. 😅😅I have never encounter this issue. After you steam the dough, is it oily like mine in this video? If yes, did you knead into a smooth dough? If yes, maybe during the cool down process, use a cling wrap to wrap it while cooling. That's all I can think off

You could try skin 40g, ice cream 35g. Or to start with, skin 45, ice cream 30g. Did I miss understand your question?

No need but need to wait it totally cool down. But to wrap the ice cream, take the ice cream out one by one at the time of wrapping.
my dough still sticky after it completely cool down and after knead. I can't wrap with Ice cream without hand glove. is that correct?
Use gloves to knead. Make sure all oil are absorbed properly

不可以放在室温喔。 肯定会溶的。 我都放在冷冻室里。 要吃的时候,我先拿出来回温一下(要不然皮很硬嘛)。 回温大概 3到10分钟(看室内温度)。 手碰一下外皮,如果有一点软了,就可以吃了。(这时候冰淇淋刚好) 皮不可以太软,要不然冰淇淋也融了。
