The only bahn mi I have ever had was vegan and did not know about the pate. The sandwich is delicious with avocado 🥑 and/or pineapple🍍👍 Yours looks good. Gonna pass this video on to my daughter (who was the one to introduce me to bahn mis lol) Nice work!

Thanks for watching! I'm sure the pate can be made with something else, but I'm not really sure what. Maybe just more walnuts? I made this for my partner who does not like mushrooms at all, and he loved it. It doesn't really taste like or have the texture of mushrooms.
Any particular types of dishes you're interested in? Tofu can do many many things; it comes in so many different varieties, and it can be prepared in an unlimited number of ways? What kinds of foods are you missing/craving?

I would think that white beans, garbanzo bans or tofu would probably work just fine. It's definitely worth a shot. If I had to choose one, I would probably try white beans first.
You can use as much or as little oil as you would like. As long as your pan is nonstick, or you trust it to release the tofu, you should be good to go.

I have never had Banh Mi. But the Mushroom Paté is what intrigues me. Another one added to the list.

The mushroom/walnut pate is so delicious and easy to make. I whipped it up in no time and used it in my sandwich and it turned out fabulous.

Swap the jalapeños for Birdseye chilli. The heat from chilli is one thing, but the flavour of jalapeño is different.
That's definitely a way to heat things up. I love birdseyes in Thai foods, but think they might be a bit hot for me on this sandwich. But go for it!

Hmm.... I've only ever had jalapeño on banh mi. I didn't know it wasn't "traditional".

Boo! Maybe cucumber? Or just more carrots? Daikon is a type of radish, so you could use red radishes as well.
