I made 2 batches of this today. One with raspberries and the other with strawberries! Both are amazing! The first one I mashed up with a potato masher. The second I left chunky. Our family liked chunky better but either way it’s really fantastic and now will be something I can every year. The other point is even low sugar it’s sweet. I will cut the sugar down even more next time. The alcohol is fantastic in it! Thanks Carol.

Suggestions: one year my Dad got a large jar for Christmas that had all the dry ingredients in it. Don’t remember what it was we made but it was good. You would layer it in a jar with a regular lid not the lids for canning then put a bow on it. You want the person to see the pretty layers. Then you give them the recipe so they can add wet ingredients and bake it. You can do several and place in a pretty basket.
Oh my goodness! This is A-MA-ZING! I used the orange extract but will try the Grand Marnier sometime. If you are on the fence about trying this, I promise you will be glad you did. 😁

Yes I am doing some homemade gifts. I love to make a basket for some people, with cakes, and chocolate covered pretzels and apple butter etc. This is an awesome addition. 😊
Thank you about the reduced sugar. I spent hours picking black raspberries in my hedge rows then added the recommended amount of sugar, it was sickeningly sweet. Everything I jam now is reduced sugar for the taste. I want to try the date, orange, cardamom. I've never tasted cardamom, in fact I don't even know where to get it except Amazon, but I'm anxious to try it. I like to jam the odd things like peppers, tomato, watermelon, kiwi, pina colada, etc. Wish I could get hold of some paw paw sometime. I'll be looking up your recipe for date, orange, cardamom.

Hi Carol, I just made a double batch of this and I only used 6 cups total sugar and and it was perfect! I also used raspberry/peach grand mariner, it’s what I had on hand. So yummy! Know off to the orange cardamom recipe😁😁

Good morning Carol. I gifted Christmas Jam and a dear friend who absolutely loved it, gave me cranberries, Just cranberries, yesterday. She wanted me to make her several half pints. I had to ablid this morning. Instead of pears & raspberries, I had to use a green apple and frozen crushed strawberries. It is very good, but checking to see if you think it's still shelf stable.
This jam turned out AMAZING! WOW!!! Too many seeds from the raspberries though for me. (I have diverticulitis) but these will make beautiful gifts. What other fruit would you pair with the cranberries so I can enjoy as well?

I was thinking about mashing the raspberries thru a sieve strainer to get rid of the seeds, might have to put a cloth or coffee filters in the strainer first so the seeds won't push through... always I buy raspberry jam with no seeds, plus you don't get them stuck in your teeth. You talk of juice of 1 orange, zest of 1 orange and using 1 pear. Since all of these can range in different sizes, was wondering if you could either measure them in cups or in weight. I made some of this today, only thing I left out was the pear, WITH the Grand Marnier OMG, I will be making this again, maybe with 3 1/2c sugar, I could eat this by the spoonfuls.
I bought the counter that you have and I am trying to see how long it would take to come to a boil I have a regular glass top stove and it’s been an hour and it’s still not boiling and I am in zone one. Maybe you’re not supposed to use it on a glass stove but I’m not impressed. Can you give me any suggestions what I’m doing wrong? I have the old black enamel one that would’ve been boiling by now. I saw yours and wanted one.

Loved this video. Just found you on UA-cam and subscribed. I am making Christmas Jam (first time canning EVER) and I have a question for you. The recipe I am following makes twelve 8 oz jars. This is double what I can process at a time, is it okay just to leave the extra jam in the pot I cooked it in while 1/2 of the cans process or should I fill all of the jars, process half and then do the other half after the first 6 are processed?
The processing time is short so I would fill and process in batches. Also know you can use any pot you can put a rack in and is deep enough for jars to be covered by at least an inch of water. No rack no problem, use a kitchen towel 😁
I was so glad to see this receipt. I saw it on u tube and it was video with no talking just video. It had liquid pectin and i do not like liquid pectin. i am using strawberries because i have a lot of frozen one. How many cups of berries do I need?
I live at 3,500 feet in altitude, so I’d have to add 10 minutes to the processing time, for a total of 20 minutes. Can I use my steam canner for that length of time?
I am very new to canning and I must say, I am loving every minute of it. And your videos are simply amazing! Now I have made 2 batches of this jam and I'm already out (gifting a lot). I am wanting to make more, but I can only find regular pectin this time around. Will that be a problem?
Could you use orange juice instead of an orange and water? And just add commercially dried orange rind? And I did add triple sec to my jellied cranberry sauce and it worked out great. Plus the Triple Sec is so much less expensive.
The kneadyhomesteader said yes you can add 1 cup of orange juice. I would add the dehydrator orange peel zest to any of the liquid and let it soak in juice for quite a while ❤ 🎉🎉 😊😊😊
I just found your recipe and really like it but have a couple of questions... as written, does this jam set up really well? If it's a little on the thinner side, how would you form it up a little? I'm not a big fan of the raspberries, with that being said, how much strawberries would you use? I will need to use frozen and they are not in season. It was a HUGE hit... my fiancee said I need to make more before it jars were even cool enough to touch... the jars appeared to have set fine. I will be repeating this with cherries this weekend. I made the Christmas jam last week and it did not set up as well as the carrot cake jam. I am kind of disappointed because I wanted it to be more spreadable not runny. I followed your instructions but used regular pectin. Do you think I could do the same amount of sugar but add more pectin? I used 6 tbl of powdered pectin for the carrot cake jam and the six cups of sugar. Maybe I should try using the same combo of sugar and pectin as I did in your carrot cake jam? Do you think that would be OK? The Christmas jam tasted good but it would have to be used for topping for ice cream only.
The type of pectin you use and the amount of sugar are important for setting. If you used regular pectin the amount of sugar will not be the same as using low sugar pectin for it to set
I just made this with strawberries instead of raspberries (I'm not a fan of raspberries). And i tasted it and it was amazing. Question though, did you peel the pear first or did you leave the skin on?
Got it, well i left the peels on and it's still delicious. All my friends are loving it, it didn't come out to firm but it's still great. I can put it on ice cream, brie or cream cheese. Thank you again and Happy Thanksgiving
Carol can I substitute triple sec or Blackberry brandy for the Grand Mariner? I’ve never bought this liquor so I see it’s expensive. If I can substitute would it still be 2 tblsp? Thanks
I’ve got all my ingredients and will be trying this tomorrow, but I have a question about cooking time. Is there a way to tell when the cranberries are cooked enough? Whenever I do the Ball recipe for whole berry cranberry sauce, it takes at least twice as long (30 minutes instead of 15) for the berries to burst and the sauce to pass the gel test than it says in the recipe. Is there a similar “readiness” test for this jam, or can I use a candy thermometer to know I’ve cooked it down enough?
This recipe uses pectin so if you follow the instructions for this jam it will be fine. Cranberry sauce is relying solely on the natural pectin found in the cranberries so cooking time is more critical 😊
@@carol-thriftychichousewife6231 would you mind adding a note in the recipe to use 1 tsp of orange extract in place of the Grand Marnier, if desired? I just made this for the third time but totally botched the recipe by adding 1 tbsp of orange extract instead of a teaspoon. (I made it with Grand Marnier previously and remembered that it was supposed to be less of the extract, but I was following along in real time while canning and-in a panic-took an educated guess that turned out to be quite wrong. Super sad that I messed up this batch, since the jam has been a huge hit with friends and family.) 😢
I find myself a little curious why this recipe would need added pectin. Cranberries and pears are full of pectin. May try to make this pectin free and see how it turns out.

Pauline Turk the Ball Low or no sugar pectin label says you may use a sugar substitute 😊. However, it doesn’t say how much. If you’re currently using Splenda maybe you would know already how to substitute? It also states to add it at the same time you would add sugar in the recipe. With this pectin you don’t need to use sweetener at all if you prefer that. Hope this helps 😍
Gwen Kaiser you cannot pressure can jams or jellies BUT you can use your pressure canner as a water bath canner. I will eventually do a video on this but I’m sure you need to know before then 😉. Ok my jam I made yesterday was too thick and too tart. So today I reprocessed it all and added 2 cups of sugar and at least a cup and a half of water. Maybe the fruit here in Va is more tart. Cranberries come from Canada. But now I feel the jam is perfect and is so good!
kimberly nance I’m so sorry... mine was perfect 😞. I’m glad you were able to fix it though. The one thing I have learned is to cook it on fairly high heat. If your burner isn’t hot enough to bring it up to a boil quick enough you can overcook it and it does get too thick. I’ll try to remember to talk about that the next time I do a jam video. And it is a judgment call with the sugar. I’m just happy it worked out. 🤗
2020 Made this last year loved it and was wondering if I could double the receipt/ Also I only have regular pectin because my low sugar pectin is out of date. Does that make a difference in the receipt? The stores are out of pectin I guess 2020 makes it hard to find things.
Hi! I’ve never doubled the recipe so I can’t speak to the outcome. I do know it’s not usually recommended. It’s fine to use regular pectin for low sugar jam 😊

Mary Burt we’re also adding more sugar and the other fruit so if you want it to have a jam texture you still need the pectin. I’ve not tried it without adding pectin so I cannot speak to results without using it. If you choose to not add it I would think you will need a longer cooking time. I suspect if you don’t add the pectin you will still have some body but it will be more sauce like than like jam 😊

The recipe I used was written just like I made it so I’d have no way to do that. Just use average sized fruit 😊

Yes. Anything under 45 minutes is fine for steam canning
In your canner how much water you use inside canner. Does it cover the jar OR below the lid.
In steam canning I use 3 quarts of water. If water bath canning the water must cover your jars by at least 1”

This jam has perfect texture, not too firm or soft IMO 😊. And you can use an equal amount of strawberries if you prefer, frozen is fine.

I followed your instructions but used regular pectin. Do you think I could do the same amount of sugar but add more pectin? I used 6 tbl of powdered pectin for the carrot cake jam and the six cups of sugar. Maybe I should try using the same combo of sugar and pectin as I did in your carrot cake jam? Do you think that would be OK? The Christmas jam tasted good but it would have to be used for topping for ice cream only.
The type of pectin you use and the amount of sugar are important for setting. If you used regular pectin the amount of sugar will not be the same as using low sugar pectin for it to set

I just made this with strawberries instead of raspberries (I'm not a fan of raspberries). And i tasted it and it was amazing. Question though, did you peel the pear first or did you leave the skin on?

Carol can I substitute triple sec or Blackberry brandy for the Grand Mariner? I’ve never bought this liquor so I see it’s expensive. If I can substitute would it still be 2 tblsp? Thanks
Gran Marnier is orange flavored liquor but you can substitute any liquor you choose in the same amount

You cannot cut the sugar in jam or jelly unless the recipe is written that way. You can use frozen cranberries

I’ve got all my ingredients and will be trying this tomorrow, but I have a question about cooking time. Is there a way to tell when the cranberries are cooked enough? Whenever I do the Ball recipe for whole berry cranberry sauce, it takes at least twice as long (30 minutes instead of 15) for the berries to burst and the sauce to pass the gel test than it says in the recipe. Is there a similar “readiness” test for this jam, or can I use a candy thermometer to know I’ve cooked it down enough?
This recipe uses pectin so if you follow the instructions for this jam it will be fine. Cranberry sauce is relying solely on the natural pectin found in the cranberries so cooking time is more critical 😊

@@carol-thriftychichousewife6231 would you mind adding a note in the recipe to use 1 tsp of orange extract in place of the Grand Marnier, if desired? I just made this for the third time but totally botched the recipe by adding 1 tbsp of orange extract instead of a teaspoon. (I made it with Grand Marnier previously and remembered that it was supposed to be less of the extract, but I was following along in real time while canning and-in a panic-took an educated guess that turned out to be quite wrong. Super sad that I messed up this batch, since the jam has been a huge hit with friends and family.) 😢

I find myself a little curious why this recipe would need added pectin. Cranberries and pears are full of pectin. May try to make this pectin free and see how it turns out.

Can you use Swerve or splenda in place of sugar?
Pauline Turk the Ball Low or no sugar pectin label says you may use a sugar substitute 😊. However, it doesn’t say how much. If you’re currently using Splenda maybe you would know already how to substitute? It also states to add it at the same time you would add sugar in the recipe. With this pectin you don’t need to use sweetener at all if you prefer that. Hope this helps 😍
Can you use pressure canner for the jam. If so how long to cook?
Gwen Kaiser you cannot pressure can jams or jellies BUT you can use your pressure canner as a water bath canner. I will eventually do a video on this but I’m sure you need to know before then 😉. Ok my jam I made yesterday was too thick and too tart. So today I reprocessed it all and added 2 cups of sugar and at least a cup and a half of water. Maybe the fruit here in Va is more tart. Cranberries come from Canada. But now I feel the jam is perfect and is so good!
kimberly nance I’m so sorry... mine was perfect 😞. I’m glad you were able to fix it though. The one thing I have learned is to cook it on fairly high heat. If your burner isn’t hot enough to bring it up to a boil quick enough you can overcook it and it does get too thick. I’ll try to remember to talk about that the next time I do a jam video. And it is a judgment call with the sugar. I’m just happy it worked out. 🤗

2020 Made this last year loved it and was wondering if I could double the receipt/ Also I only have regular pectin because my low sugar pectin is out of date. Does that make a difference in the receipt? The stores are out of pectin I guess 2020 makes it hard to find things.

Mary Burt we’re also adding more sugar and the other fruit so if you want it to have a jam texture you still need the pectin. I’ve not tried it without adding pectin so I cannot speak to results without using it. If you choose to not add it I would think you will need a longer cooking time. I suspect if you don’t add the pectin you will still have some body but it will be more sauce like than like jam 😊
