  • Hello! In this video, I'm sharing the step-by-step process of making sourdough bread. This bread, made with natural fermentation, stands out for its flavor and healthy ingredients.
    1. Autolyse: I mixed the flour and water and let the dough rest for 30 minutes. This process helps develop the gluten structure and improves the texture of the bread.
    2. Folding: I folded the dough 4 times to give it a strong structure. Folding allows the dough to aerate and rise better.
    3. Temperature Control: Keeping the dough temperature between 26-27 degrees Celsius is crucial for the fermentation process. At this temperature, the yeast performs optimally.
    4. Cold Fermentation : I let the dough ferment in the refrigerator for about 16-18 hours. A long fermentation time deepens the flavor of the bread and develops more complex aromas.
    5. Baking: I baked the bread in a preheated oven at 220 degrees Celsius, using steam. The steam helps the crust become crispy and develop a beautiful color.
