  • This is a test on an 8" chefs knife, the steel is a softer stamped steel x30cr13. Pretty decent number for it being a softer/cheaper steel.

    Suweet. Posted a lengthy comment on Reddit, but thought I'd ask about your abrasives, progression, and angle used on this knife. That's about as sharp as it gets for one of these knives. Nicely done.

      Hey thanks Kenny, just replied over on reddit. Shapton pro, 1k, 2k, 5k, 8k. Diamond on leather from 3m to 0.25m, emulsion that I mixed. Yeah about as low as I can get it, was able to get vg-10 reading of 10 bess. The angle is somewhere between 13-15 if I had to guess, defiantly not for heavy cutting. I need to get one of those gritomatic laser angle gauge doohickeys.

      Cool. I was up way too late last night taking my Victorinox 8 in chef knife to 12 dps on EP. To be certain I was dead on 12dps, my only choice is either belt grind (convex) or EP. I need fixed angle to be sure. I used Shapton Glass 1K-8K then just bare leather to get 49 BESS. I need to prep some diamond dressed leather tomorrow to see what it does to my number. I really need to get a better diamond coarse for these type of projects. I’m really curious how much better the knife will function at 12dps vs 15-17 dps factory bevel. The machine has helped me really understand “know” when I have a true apex AND burr is really gone. I’m still struggling with the best / easiest / quickest way to keep the knife very sharp. Experimenting with ceramic, which is pretty darned good, but wondering if diamond stropping better albeit significantly more hassle. (Doubt others in home would follow).

      @@kennymanchester What kind of belt grinder? That's a a really solid number for that combo and very sharp, what diamond and micron are you using? Would be interested in how much the overall number drops. Might notice a slight improvement but the edge will defiantly roll easier. Best way to keep sharp imo is a good higher hardness steel that is properly sharpened and diamond a firm leather. I have a gyuto in bd1n that's been going for some time now, strop on 3mic diamond on leather and still very sharp.

      @@NORTHWESTKNIFEGUY It's just a little 1" x 18" - If I had space I'd go to a 2in but tbh I only use it for big changes and repairs as stones are just too slow. I don't have any Diamond belts though so I may rectify that soon, even if I have to "roll my own." I have 1.0, 0.5, and 0.25 micron diamond sprays (the good stuff ) that I plan on using on Bovine leather on EP plates, again, I'm really experimenting with precise angles to see if it really makes that much difference for edge retention. I can't do better than plus/minus 3 degrees by hand and I want .5-1.0 degree for now. Sounds like a 3 micron diamond spray or paste is in my near future ;) I have a vg10 I've been working with that may work well on strop w 3 micron diamond. Do you like spray or paste? Do you ever use bare leather? Hanging strop?

      @@kennymanchester Nice, I use a belt sander when sharpening knives that need major repair like broken tips and large chips then finish on stones. Yeah 3mic is quick and leaves a nice aggressive edge, I use them all depending on the substrate but use diamond on firm smooth leather more then anything else. I really like to finish my kitchen knives on bare horse hide (veg tan), can use after last stone or even after strops loading with compound.     This knife is amazing for the cost. Ergonomic handle and great cutting edge for a cheap knife. We have 2 in our RV that get abused. Quick stroke on ceramic rod and back to cutting.

    Very good for a freehand. Our (SABOL BROTHERS) basic edges are between 8 and 20 on a BESS tester, but not free hand...

      @@NORTHWESTKNIFEGUY 13 dps usually. Basically, it is all CBN abrasives, but I would like to keep the details for myself. You can watch the latest video from burrfection channel... Next time, we will try some of our premium edges on MagnaCut, maybe around 10 dps. We would like to get the score around 3, maybe even lower. We will see. Our basic edge achieved a score of 8, so everything is possible.

      yee I'm in gemani of EU, but situation seems under control, no spiraling. boring days, am playing with the wooden box haha (as if it were a houseplant) and put all my knife 💰 money into de current down stock market. so no more buying of knives, stones, accessories possible lol😆. I'll be buying a scraping tool, that's all left i can afford 😂.

    The problem I found using that guide, is it creates an angled motion. It can act almost like a saw. Going straight down, with the edge perpendicular, and taking an average score, seem to yield more reliable results. Regardless, 25 is freaking sweet :D Well done. I'd love to hear your thoughts on the bess tester, and anything youve found to help you utilize it.

      By the time it contacts the test media it seems to be fairly level / parallel so not sure if there would be a any sawing motion but maybe, will have to take a close look at that. At first I started using it without the magnetic guide however I seemed to get more consistent results with it. Also keep in mind that I have the B model that is in 5 gram increments, if you have the A model that is in 1 gram increments so you might be able to see variations a little easier. When using I adopted the method that sharpco created using a 100g weight to set the tension on the test media, pulling the test media really tight seems to lower the score a little among other things. Have you been on the Bess forums, lots of good info there? Also been looking into getting a high magnification microscope next.

      @@NORTHWESTKNIFEGUY No I haven't gotten to the forums. Didn't even know they had any to be honest. I thought about trying to design a way to add weight slowly, against an edge, till it cuts the media. Just too much effort :p
      I also noticed the tension of the wire plays a huge roll in how easily the media is cut. I have a leatherman that I wrap a rubber band around the jaws of, and let that hang, while I tighten the wire. It isn't perfect, but simple. The premade clips are horrible in this regard. None are uniform, and can give wildly different results. They told me to bend the clips a hair, to tighten the them, but even doing that, doesn't seem to help. I found variances of up to 50%.
      As for the sawing motion, it occurs on a very small level, but that is all the is required. I liked blade banters approach. He set up a spinner, and a trigger puller, to test against the media. Quite clever, and removes a few factors out. Except the results are measured on the trigger puller, and not a bess tester. Funny ole thing, trying to show, and test sharpness. Anyways stay safe!       @@Jef www.bessex.com/forum/ lots of good info there. Yeah, if you pull very tight you can reduce the numbers slightly. That is a clever and simple way to get repeatable tension on the test media, will have to try it. I have the B model so do have any experience with the pre-made clips and 50% is a huge variance. I have been messing around kinda going back and forth between using and not using the magnetic guide. I have noticed a slight difference, for me I seem to get slightly more constant numbers when using the guide, maybe a little too shaky freehand not really sure. Will have to check out blade banters method, I think I may have seen that a while back but will double check. Hey you too Jef, so far family is doing well and safe.
