You've asked how to color the shapes: just select all adjacent lines and just create a new shape with a Shape Builder Tool (Shift+M). The only downside to this, that you won't be able to properly adjust the lines after creating new shapes.
For placing the colors behind outlines I usually just make a big shape above my sketch and then with the shape builder tool just go over the individual shapes that I want. But that only really works well for bigger shapes like in the sketch here

Hi Cosmin! Love your videos they've been helpful for me as someone self-learning design. I actually watched a tutorial before that was really helpful for me on how to create bold stroke outlines. In the video he overlaps most paths instead of closing them and use the pathfinder outline -> remove excess paths. Most of the segments should already have been closed but you can check beforehand using the shapebuilder tool. Object > live paint > make then go to the tool bar live paint bucket abbreviation is K

i think you can do object > live paint and it will create shapes from your outlines that you can fill :)
