I would include Ballechin 10. Savory, meaty, salty, fruity. A beautiful dram. A little lectin funk that some don’t care for but plays very well IMO. But can’t make this list since it’s a Highland.
My personal choice is Talisker 10YO. I have not tried the new bottlings but did purchase several of the older ones. The barley sugar sweetness is interesting with the peat/smoke.

From Islay one of my favorites for summer would be Lagavulin 16. The biggest issue however is the price in Ontario, approx C$165!
