I remember asking him about this a few years ago. He shared with me that this was a normal stance or position he had from servicing on the food truck so it's comfortable for him though it looked uncomfortable for us. Just thought I'd share.

Man it doesn't matter if you don't make a 100% accurate italian dish everytime, the main quality most of us italians appreciate is the love and respect for our food, the research, the passion, and you have all that!
Its not important to make accurate Italian dishes as long as you do not claim authenticity like many do.
Stephen, your pasta videos are the best. I watch all your videos and I love them, but the pasta ones just have a special place in my heart (and I feel like yours too). You just do them so well, so easy but they turn out so delicious.
P.S. I thought you’d run out of simple pasta ideas a long time ago but you keep going lol, congrats!
I especially like his modesty. Some other cooking guys totally freak out when they take their first bite cause it’s sooooo unbelievably delicious, but Stephen here not so much.
That being said, this looks really nice, as do most of your dishes, and I would take it over these other guys any day. Keep it up!

When I lived in Italy the guys I worked with would bring fava beans to work fresh from the field and pop them out and eat them raw. I tried them and they were good, kind of a green starchy chew but kind of refreshing.
That looks great! I love lemon but have never thought about adding it to ricotta for a dish like this, I have to do that now - and of course make my own ricotta following your last video. And 1000% yes on supporting your local farmers' markets! I just heard today that local tomatoes are in now and I am super excited to start eating and cooking with fresh tomatoes again!

There actually is a pasta primavera in italy: some people call that pasta with tomato sauce with mixed in some pesto and maybe some ricotta.
Also try Fave with some prosciutto on some nice bread without the boiling part. Very frugal but amazing for a dinner during summer when the sun is starting to set on the fields after a super hot day.

Every time I see fava beans, I think about the jerky boys. This is a good one. I don't think I've seen primavera with ricotta in it before. I'd eat it!
I'm not so big on vegetarian dishes but this looks amazing. I'm sure my sister and her boyfriend who are both vegetarians would love this. I'm gonna invite them over and make this for them.

So good Steve.. Man as a teenager I would shell a pound of those fava beans. We didn't even par boil them. Now I'm lazy and have bought canned ones. I'd mix the fava with onion, eggplant, celery or whatever I had. Add a little paste from Italy and voila.. I'm going to try your pasta primavera. Those peas and brocollini are my favorite

Nice video! I am not sure if this was mentioned, but go easy with the salt in the pasta cooking water as you will use it in the dish. Ideally, for dishes that use the pasta cooking water, like the aglio e olio, I use 1/3 of salt from what I usually use for other pasta dishes (like regular tomato sauce)

I learned something new. How to prep fava beans. I go to the farmers market every Sat. to get my weeks veggies (year round, we're lucky) I will look for the beans.

Just recieved my immersion blender today. Also bought a temperature probe and a big Boos board. Got an Atlas 150 and the spaghetti cutter plus some 00 flour and semolina. I'm all prepared to cook but now I'm broke.

Sugar snap peas never get to my kitchen. Also you can eat those extra skins of the fava bean I’ve been eating them all my life
Be careful with the sugar peas, I once opened one for fun and found it was full of woodlice
