I visited the UK when The Queen died, it was for a wedding in Scotland, I crave the foods there. The US doesn't do it right. I miss Scotch Pie, steak bake, haggis, and all those wonderful foods you just can't get here.

I love Chef John, America’s Test Kitchen, Kenji, Marcella Hazan, but this is the most delicious thing I’ve ever cooked in my entire life. I had to buy the rolling pin, pie tins, and pastry cutters, and it takes several hours to make, but this is well worth the effort and will blow your socks off.
They sound brilliant. I will get the ingredients in the morning & cook in the afternoon. It's just another excuse to open a nice bottle of red! I will encasing mine with wholemeal pastry because of my Wife's type 2. Wishing you all the best.....

This (and other meat pie recipes i've watched on this channel) will one day inspire me to spend 2 days cooking up a whole batch (at least a dozen or so) so that i can freeze and bake later. Too much work for just 4 pies. This is the kind of recipe, in my opinion, that works out better if you do a whole bunch at one go. That way when you want a delicious meat pie, you don't have to plan ahead more than 24 hours (less if you defrost in a microwave). A vacuum packer and heat sealer would be your friends if you are doing a bunch. Freezer bags, while handy, will result in freezer burn if you keep them a long time.

So...I could not resist taking on this adventure since I love steak pies and steak au poivre is my all time favorite. Turned out amazingly well. Shared with my son and daughter in law and they gave the pie 10 out 10. So...thank you Chef John, you have some new fans in Richmond, Virginia. I used Campbell Onion Soup mix for the beef stock, all butter shortening and an instant pot to prepare the filling. It took 20 minutes under pressure, no mess no fuss. Beef was fork tender and tasted great even before the pepper sauce. Thanks again.
Oh man those look divine. Made the filling and pastry yesterday, going to finish making the pies today. Couldn't resist. Thanks for ruining my diet, John! Also, if anyone is interested in the saucepan John uses to make the filling, it's a Judge Vista Draining Saucepan, possibly the 20cm / 3L version. I went out of my way to find it and have finally acquired it - I used to use Tefal, but they're not very conductive on induction hobs - Judge, on the other hand are. I don't use Tefal anymore. Have a better one!

Hey John, just wanted to drop in and say a big thank you for freeing me from generations of women who make pastry where everything has to be ice cold! Cold butter rubbed in, ice cold water blaa blaa. This was soo very simple. I made my own fillings but the result was a delicious pastry that all loved! Living in Australia, keeping ingredients cold can be a challenge!! I’ll use this one alot!!

We had to make these pies after watching the video and have just done so - OMG the absolute best pepper pies ever! The pepper sauce is not in-your-face spicy hot at all, it has a lovely depth of flavour and would be very versatile for other dishes imo. Combined with that amazing hot-water pastry, which is now our go-to pastry, this is a wonderful, flavourful dish! And so easy to make 😊 Thanks John!

These pies are very good and simple to make if you follow the steps from chef. We have made a variation where rather than peppercorn sauce we just made a simple ground black pepper flavoured beef stock based sauce, being honest it was because we had started the process of pie making and realised we only had ground white and black pepper. This recipe is great for when you find cheap beef reduced to clear, making a large batch using what we want and portion the rest into ziploc bags and freezing. This saves energy which is important considering UK electric and gas prices and time for the next couple of pie seasons aka beer and pie infront of the telly watching the match.

We didn't really appreciate it until she had gone, Christmas came around and our family realised that none of us knew how Mum used to make the trifle, the roast, the mince pies, the yorkshire pud, the Shepherd's pies, Beef Wellington, Soups and Casseroles and Breads and biscuits and dampers and scones and crumpets and pancakes, shortbread, the Christmas Pud, the Cornish pasties, fruitcakes, and a whole list of things... Our Mum was always in the kitchen making something and without her and those meals our gatherings just faded out. Those meals were connecting us all on the major holidays and grounding us in our English traditions. It is a blessing to find a chef sharing the knowledge 👍

Must try this! I don't have small pans, but I turned three different sizes of maple pie dollies. I have quite a bit of venison in the freezer, and I noticed that the beef you used was rather lean. Using venison, would you add some pork fat or would the cream suffice? I have been making your 2 hour bread recipe for toast and sandwiches once a week. Very good and a real time saver! Hello John, I made these lovely pies for our dinner today, they were absolutely delicious! I swapped the hot water crust pastry for shortcrust as it's a personal preference. Everyone agreed that they were the best pies ever! Thank you for sharing this lovely recipe 😀

I love Chef John, America’s Test Kitchen, Kenji, Marcella Hazan, but this is the most delicious thing I’ve ever cooked in my entire life. I had to buy the rolling pin, pie tins, and pastry cutters, and it takes several hours to make, but this is well worth the effort and will blow your socks off.

This (and other meat pie recipes i've watched on this channel) will one day inspire me to spend 2 days cooking up a whole batch (at least a dozen or so) so that i can freeze and bake later. Too much work for just 4 pies. This is the kind of recipe, in my opinion, that works out better if you do a whole bunch at one go. That way when you want a delicious meat pie, you don't have to plan ahead more than 24 hours (less if you defrost in a microwave).
A vacuum packer and heat sealer would be your friends if you are doing a bunch. Freezer bags, while handy, will result in freezer burn if you keep them a long time.

So...I could not resist taking on this adventure since I love steak pies and steak au poivre is my all time favorite. Turned out amazingly well. Shared with my son and daughter in law and they gave the pie 10 out 10. So...thank you Chef John, you have some new fans in Richmond, Virginia.
I used Campbell Onion Soup mix for the beef stock, all butter shortening and an instant pot to prepare the filling. It took 20 minutes under pressure, no mess no fuss. Beef was fork tender and tasted great even before the pepper sauce.

Also, if anyone is interested in the saucepan John uses to make the filling, it's a Judge Vista Draining Saucepan, possibly the 20cm / 3L version. I went out of my way to find it and have finally acquired it - I used to use Tefal, but they're not very conductive on induction hobs - Judge, on the other hand are. I don't use Tefal anymore.

Hey John, just wanted to drop in and say a big thank you for freeing me from generations of women who make pastry where everything has to be ice cold! Cold butter rubbed in, ice cold water blaa blaa. This was soo very simple. I made my own fillings but the result was a delicious pastry that all loved! Living in Australia, keeping ingredients cold can be a challenge!! I’ll use this one alot!!

We had to make these pies after watching the video and have just done so - OMG the absolute best pepper pies ever! The pepper sauce is not in-your-face spicy hot at all, it has a lovely depth of flavour and would be very versatile for other dishes imo.
Combined with that amazing hot-water pastry, which is now our go-to pastry, this is a wonderful, flavourful dish! And so easy to make 😊

These pies are very good and simple to make if you follow the steps from chef. We have made a variation where rather than peppercorn sauce we just made a simple ground black pepper flavoured beef stock based sauce, being honest it was because we had started the process of pie making and realised we only had ground white and black pepper. This recipe is great for when you find cheap beef reduced to clear, making a large batch using what we want and portion the rest into ziploc bags and freezing. This saves energy which is important considering UK electric and gas prices and time for the next couple of pie seasons aka beer and pie infront of the telly watching the match.

My Mum b.1926, sadly passed now, was a fantastic cook who made N.English traditional foods every day. We didn't really appreciate it until she had gone, Christmas came around and our family realised that none of us knew how Mum used to make the trifle, the roast, the mince pies, the yorkshire pud, the Shepherd's pies, Beef Wellington, Soups and Casseroles and Breads and biscuits and dampers and scones and crumpets and pancakes, shortbread, the Christmas Pud, the Cornish pasties, fruitcakes, and a whole list of things...
Our Mum was always in the kitchen making something and without her and those meals our gatherings just faded out.
Those meals were connecting us all on the major holidays and grounding us in our English traditions.
It is a blessing to find a chef sharing the knowledge 👍

I have quite a bit of venison in the freezer, and I noticed that the beef you used was rather lean. Using venison, would you add some pork fat or would the cream suffice?

Hello John, I made these lovely pies for our dinner today, they were absolutely delicious! I swapped the hot water crust pastry for shortcrust as it's a personal preference.
