2:40 I'm having trouble understanding how Vgs can be negative for an N channel mosfet and turn on. I think the -10 means that Vs-Vg can be -10v without damaging the mosfet (and the mosfet will be in cut-off region in that case).

Negative voltage can be used for decreasing turn off time, making it turn off faster

IT DEPENDS, on the frequency at which you work the mos .. in principle you have to stick to the values of the mosfets with worse characteristics.
