I live abroad and here eating raw spinach is very common with salad. However, the salad spinach leaves are small in size and they come washed. In India, you get those bunch with large leaves and i've never tried eating them raw.
You can do 50,50 sometimes raw sometimes cooked

Oil ghee can be cooked for few minutes after five minutes it start spliting ....So short heating does not changes it chemistry ...

I cannot stand mushy greens. Mercilessly overcooking any food only destroys its nutritional value.
We eat baby spinach as Salad, or add a cup of chopped spinach to hot soups, cooked daal or Alu sabji, cover the lid, and turn the heat off. Done in 5 mts, and ready to serve.
Other greens, such as Kale, Mustard Greens, Methi and Bathua need no more than 5 mts. to become tender. Always cook them covered to retain most nutrients.
Even other vegetables, such as, Green Beans, Cauliflower, Broccoli and Cabbage all taste much better when they still have a crunch. Only exception are Okra (Bhindi) and Bitter Mellon (Karela), which need to be roasted until cooked. Steam them will make a mess.
