      Me too! My conscious bias says it'll do well, but blind tasting has been known to result in egg on my face 😂

    Looking forward to your findings. You’re really doing yeoman’s work here. Hit me out of left field to see James H essentially say the Niche Duo is little different than the Zero. Kind of took the wind from sails especially with others noting smoother clearer profiles or decent w/light roasts with it. Have a NZ w/an old Silvia but a Linea Micra is soon on the way and looking forward to the machine variable getting better before investing in more grinders. Getting shots that lean toward unpleasant sharpness or acidity and only random sweetness and I think the temp surfing and swings are the main issue even with medium, med dark roasts.       Getting temp stability makes a massive difference. You're going to be like a pig in mude with the Linea Micra.
      The Hoff thing didn't surprise me much. Personally I think there is a difference but not much and to be fair I haven't blind taste compared them yet. Coming soon.
      The problem with the Duo is the espresso burr set. It's a commercial 151B and my guess is that it was designed to create inoffensive espresso for the masses.
      Mazzer have come out with the k151H for espresso and the k151G for brew which by contrast are highly refined, nuanced and super interesting.
      Trouble is, pop on of those into your Duo and boom, your warranty is void. I just wish Niche would sell the k151K and G as optional extras or the SSP range.
      The Duo, as a grinder, is my favorite, but not with those espresso burrs.
      But back to you, have a look at the DF64 Gen 2 or DF64V. They are both solid options and accomodate SSP and Gorilla Gear burrs.

    Tom I've heard you mention cupping protocols saying to wait until room temperature to taste. I've never heard of this, to my knowledge cupping involved tasting the coffee from a high end of drinking temperature down to room temperature at regular intervals. I've never heard of anyone waiting until room temperature to start tasting.

      Tx L3N. It's just one method for equalizing temperature which was my main point. But I agree the way I scripted could have been clearer. Remember though that this is not in the context of filter coffee but rather espresso. Traditional cuping is with the former whereas when some influencers compare espresso they need to live it get to room temperature in order to equalise temperature. In hindsight I was using the word "cupping" out of context. Thanks for your post. I'll figure out the terminology for the next update/reshoot.

    Without question you are my favorite coffee UA-camr. Your content is completely void of BS and I thank you for that.
    Actually, you’ve influenced my purchasing quite a bit as I have a DF64V and a Varia VS3 with the Hypernova Ultra burr set.
    Go figure.
    I own and operate a coffee roasting company in Nova Scotia, Canada, and I’ve been roasting professionally since 1997.
    I have to ask, what are your thoughts on Lance Hedrick’s latest data about the blind-shaker giving the highest extraction yield? I have one so I’ve tried a few shots ditching the WDT. I find the blind-shaker gets coated with fines and makes for a very unpleasant puck-prep experience. In the cup I didn’t taste a difference.

      Hi Paul, the thing that's often overlooked with refractometers is that a badly prepared puck can easily extract at a higher level than a well prepared puck.
      I used a Weber blind tumbler for a year or so but felt I still needed to use a puck rake anyway.
      Love Lances channel but this is one time where we have different perspectives.
      PS isnt the VS3 a little ripper?

      Right.
      Totally makes sense.
      Relying on extraction yield, not cup quality.
      Yes, I love the VS3.
      These days I find myself using it even more than the DF. So much more clarity compared to the Niche Zero. Must be due to the the RPM, correct?
      Actually, I use the Niche dosing cup with the VS3. It fits perfectly in the slot and there’s something I don’t like about the stock magnetic cup sticking to my Lunar when I tare it.
      And the polish on the Niche cup prevents fines from sticking as well.
      I had a Zero for years and the dosing cup was my favorite thing about it.
      When I sold the grinder I simply purchased a cup as the finally sell them separately.

    Awesome. I got the DF64v2 with Turin DLC burrs for lattes based on your recommendation and think it's great; close to, if not better than, the Niche which I wanted to replace. In the market for a good pourover grinder so looking forward to the comparisons.

      I actually like the DF64V better than the NZ for milk drinks. My fav really.
      For pour over right now (still playing around with a lot of burrs includ SSP Brew/MP, SSP Cast, DF DLC Brew) my favorite is the stock burr set in the Niche Duo being the Mazzer 151b. ive tried a lot of burrs in the Ode Gen 1 and Gen 2 as well. I'm a little bummed about this TBH LOL) cos they are kind of old fashioned cheap burrs but so far after a LOT of blond testing they still rule.
      Maybe I should post a video on filter?

      @@tomsgrinderlab I'm still comparing the DF64 gen 2 to Niche. It's close. But I think I'm leaning toward the DF as the DLC burrs are a bit better for milk drinks, I think, and I can experiment with other 64mm burrs. Throw in the anti-static shoot and it's great. Would be interesting to know how the DF64V compared to the DF64 gen 2 but probably similar enough for my needs.
      That said, I think a separate pour over grinder is required as it's too much hassle to swap the burrs out on a daily basis. Would consider the DF64V but it's interesting that the Duo Mazzer 83mm burrs are your favourite. After all my research I was expecting that something with SSP MP would be the best bet so some videos on filter would be great.
