I'm Italian and there are some tips I wanna give you: -Less onions, -use a different type of rice, I suggest you "rice carnaroli", -use a good wine and always after the rice and before the broth, -make a little bit more creamy risotto, this u made is too dry, it should make like a wave. -Do not combine fish with cheese but if you want at the end u can use a little bit of parsley. Not a chef or Italian, but I've had risotto a million times and thought the same. The end product shouldn't hold it's shape like the ball they scooped out into the cheese wheel. They either added too much cheese/overcooked it/ or let it stand too long before serving. Liiiiittle disappointing to see such a luxurious ingredient not used perfectly.

My familly roots in italia, though my father decided to go out with his wife into france, i'm technically 100% italian, and so every year, when on christmas we have a familly dinner, my uncle brings a Parmesan Cheese Wheel as a gift, and i can tell you that it is GOOD

The difference between real parmigiano and some other stuff is crazy. Im from Germany and i got about a 5hr drive to Modena but for everybody this cheese is so frigin worth it. Some nice Modena Balsamic and Parmigiano Regiano is one of the most delicious things in existence 😆
