The availability of varieties depends so much on the region! I know only a few of the ones mentioned and every country I've lived in so far had so many varieties I'd never heard of!
They only implied it. Apples don't breed true. Most turn out to be "juicers" fit only for crushing. We've only scratched the surface of apple variations, unlike other fruit.
It's probably the versatility of the apple that allows this. Apples have a lot of permutations that would be desirable to others, such as sweet/sour levels/balance, juiciness, crunchiness, mouthfeel, as well as the practical characteristics mentioned in the video. Oranges also have a high amount of versatility hence why there is so many varieties. I think that perhaps some other fruits, such as bananas, peaches and plums might have similar levels of quality but I think the hardiness of apple and orange trees means that orchards can be in temperate locations in the world and all result in unique results -- compared to, say, Bananas which favor only tropical climates.
Apples don't pass on the genetic information of types of fruit they bare. An apple that drops one type of apple that later grows into a tree won't produce the same fruit passed down from the parent tree, nor the the grandparent. With the discovery of grafting however you can copy a certain tree over and over and get the same fruit. This allows for us to grow just the apple we want in a fruit tree where there's not a lot of control over. Some fruits undergo the same process (plums come to mind, and maybe bananas; I know I heard of banana cultivars). Other fruits may be "stable" enough without the individual tree-by-tree mutation of the fruit that they don't need to be grafted to continually clone a single tree.
This is a great question, and I think I've found a pretty decent answer to this. Apple were cultivated in orchards as early as 1500 BC in Mesopotamia, which was fairly centralized among the societies in Eurasia at the time. Apples were definitely traded with the Greeks as early as 500 BC, when they already had 6 or more varieties . They became iconic to Greek culture, and eventually to Roman culture as well. Whereas citrus, from southeast Asia, wasn't cultivated on orchard scale until 100 AD, which just left breeders less time to diversify the crop. The first modern recognizable cultivar was the Seville orange from the 11th century. Thus, today there are far more apple cultivars and grafting stocks than for most other fruit trees mainly by bandwidth.

Having safety mechanism doesn't guarantee you that your water bottle is safe, it just reduces the chance of the event happening. 2. It's possible to drink all the water without realising. I always do it when I revise or play games. When I want to drink water and then suddenly it's empty. It's possible. 3. Someone could steal the water bottle before you went into the desert. Imagine someone stole your money before you went to the restaurant. You then ordered your food and picked up your wallet, but suddenly you realise your money is not there.
It's obvious, any child knows that. When a child is born, he/she/it/etc has no idea how to speak, correct? Now, there's two possible ways for him/her/it/etc to learn how to speak. The first way is to insert a computer chip inside his/her/its/etc's brain to teach the art of speaking quickly, but it costs a lot, so people often use the second way: Throw random words at the child and hope he/she/it/etc eventually learns what they mean.
We have some video tapes recording how children progress, but we don't know what happens inside their brains nor the mechanics behind, merely theories.

If a good banana was found, the opportunity to continue its breeding will have long passed and there's no telling what the fruit from the new shoot will be like.

Same with me. Granny Smith apples are the best apples (№1). They are so tasty and yummy. I love their strong tartness. Other kind of apples are less tart, and lean more on the sweet side. I find it interesting how there is no word of health or nutrients. Everything is important, how good it looks, how fast it grows, how long it lasts, how nice it tastes... But noone is thinking about the actual apple and how it could benefit (or maybe harm) our bodies.

Other apples are less sour/tart and more sweet, and there are apples that are very sweet. Fuji apples (I've never tried that apple) are probably extremely sweet. I think that Fuji apple tastes like a cotton candy (or cloyingly sweet). It is (for sure) too sweet and sugary.
