    We usually add black pepper n bring the tea to a boil a couple of times. Love ur videos. You inspired me to learn to cook after my mom died 2 years ago. My first dish were the Pumpkin Buns! Very very difficult! But you are a great teacher like my mom was! Thank you! 🙏

      Thank you for your note. Peaceful Cuisine has been helping me through my grieving process in a very quiet peaceful way. My mom used to always ask me to join in but I would just sit and watch and listen to the sounds of the kitchen and her cooking. He has captured those sounds and sights so beautifully and I almost feel at times I can put my hand through the screen and see her once more! I finally am cooking and it is sooo much fun! My fiends say I should open a bakery or cafe - but all I want is to connect within. Peaceful Cuisine brings a Zen-like meditation to cooking and I’m eternally grateful for his work! He has helped me survive my depression and learn the art of cooking while staying connected to my mom! :)

      SooperToober -this brought tears to my eyes. You may not have wanted to join in at your Mom’s request at the time, but she did plant the seeds for you to love cooking. I am sure she is there with you and smiling by your side as you cook. ❤️

    • @SooperToober

      Hi Julie- you are very kind and very right! I’ve learned that time in the kitchen is time with mom! She was meticulous and detailed like Peaceful Cuisine and while I was busy doing homework in the kitchen she would keep a watchful eye on me. It was “our” time together and Peaceful Cuisine has created and captured that sacred time and space around the “spirit of cooking”! I’m not religious- much to my mom’s disappointment- but I finally understand the importance of “breaking bread together” and as she often quoted Hippocrates quote “let food be thy medicine”! I wish I’d listened to her more...must stay positive :) thx for your note and this channel rocks!!!

    You got most of the ingredients bang on, Takashima-san !! In Mumbai, India, we like our masala chai in petite glasses, which we call "cutting chai".... It basically means half a regular cup. My family loves masala chai with a few mint leaves, fresh or dried. They pair really well with the ginger. Do try it sometime! I am a big fan of your cooking and videos!!:)

      Where do you cook?

    • @aakrutifuria
      @aakrutifuria 5 років тому +9

      @@RodTejada502 Tea from India primarily comes from either Assam or Darjeeling. There is a very subtle difference between the two. CTC as I understand means that the tea leaf is not whole, but crushed. The tea would look like small brown or black particles, which when brewed correctly, take on a reddish gold coloured tea. I think you could find brands such as Tetley, Girnar, BrookeBond, etc. In your local Indian grocery if you have one around.... On a visit to the US, we spotted Indian tea brands in Walmart and Costco wholesale too! Really not sure where you can find it though! Hope this helps!
      Also as a suggestion, Indian tea tastes best with full fat milk added straight to the pan once you have a reddish golden tea ready. We Indians also like our sugar :p

    This is a familiar sight! In small clay pots and raw cane sugar. We use locally grown tea, with vanilla in it. Loose tea and add a dash of black pepper. Brings back childhood memories of winter- massala chai and bhajia (savoury snacks) with tomato chutney, crushed on stone. Thank you for the trip down memory lane, fellow '83.

    Recipe is perfect but the amount of spices is just double than required. The masala tea should have flavour of all species but they shouldn't dominate the flavour of the tea leaves. Reduce the quantity of spices and see the magic

    • @1234jasy
      @1234jasy 5 років тому +20

    Very nice. I suggest an appliance to you. It's a Mason jar sealer. I bought mine at Walmart it is inexpensive. I keep it plugged in on my counter. All those jars of spices will have a much longer shelf life. You fit the circle part on top of the jar with the lid on. No ring. Put sealer on top. Hit the button. It vacuum seals the jar, sucking out the air. You can pop the lid off to use contents and easily reseal jar. Also can use it in fridge for condiments, leftover food, anything. It highly extends shelf life of foods. Love your style!

    I make pretty much this recipe up to where the almond milk is added, but in bigger batches. I then store it in pop top bottles in the fridge and add it to hot milk whenever I want chai. It' s really convenient this way, and it stores well due to all the spices. I once tried to ferment half a bottle of it but that went ... less well.... it's way too spicy to drink without milk!

    Superb recipe... after straining if you tumble the tea 3 times from cooking vessel to a similar sized vessel .. you will get some nice froth .. and also slightly reduce the temperature before serving to the guests

    using just 1/4th of the masala with coconut milk and no sugar makes a fantastic tea. Also, boiling the tea leaves and masala in water extracts the flavour better before adding in the milk :)
