Delicious Bulgur Pilaf recipe as a Maincourse| Bulgur Pilaf with Mushrooms that feels like meat!🧄🥕

  • Bulgur Pilav with Leeks, Carrots & Delicious Mushroom
    This creamy bulgur pilav is full of veggies; carrot, leeks and delicious mushrooms which are treated like meat. Bulgur is healthy, easy to make, economic and always delicious! Plus a great way to eat vegetables.

    Difficulty: Medium
    Prep time: 5 minutes
    Cooking time: 20 minutes + 15 minutes resting
    2 leeks, sliced diagonally
    300 g mushrooms, roughly chopped
    3 large cloves of garlic, thinly sliced + 3 large cloves of garlic, thickly sliced
    1,5 cups coarse bulgur
    1 heaped tablespoon tomato paste, or you can use 100-150 g tomato puree
    1 carrot, grated
    1 heaped tablespoon meatball seasoning mix (etsy.me/3JhIFQt , or you can find the spice mixture below for this recipe)
    1 tablespoon butter
    6 tablespoons olive oil
    4 cups boiling water
    5 pinches of salt
    A pinch of red pepper, optional
    For serving,
    Strained yoghurt
    Parsley
    Red pepper flakes
    Sour pickle juice
    • Heat a large frying pan (preferable ceramic coated). Pour in 2 tablespoons olive oil, then add the leeks and toss with a good pinch of salt on high heat until partially browned. Transfer them on a plate.
    • Pour 2 tablespoons olive oil to the pan and toss the mushroom like leeks. Add in thinly sliced, 3 cloves of garlic. After a minute add the meatball mix and toss for another 30 seconds. Add the mushrooms on leeks. Wipe the pan if there is any spice left to prevent them burning.
    • Add in the butter 2 more tablespoons olive oil to the pan. After butter melted, add the rest of the garlic. Add the tomato paste and mix until paste loosen.
    • Mix in the bulgur and stir until all of the bulgur mix with the tomato paste.
    • Put back in the leeks and mushrooms. Add 3 pinches of salt and red pepper. Give it a good stir.
    • Pour in the boiling water and transfer the pan on a smaller burner. Simmer for 15-20 minutes until some juice of the pilav left. This way pilav will be creamy and not dry.
    • Then, turn off the heat and cover the pan with a clean kitchen towel. Put the lid on and let it rest at least 15 minutes.
    • After resting, mix in the carrot and transfer on a serving dish. Make a hole in the centre and place the yoghurt in. Then sprinkle some parsley and red pepper. If you have some pickle juice pour a ladle on the pilav and insanely delicious, vegetarian dream bulgur pilav is ready!
    To make the spice mix, mix a teaspoon of cumin, a teaspoon red pepper, a levelled teaspoon garlic powder and half teaspoon black pepper.

    I am vegetarian and my husband is vegan. Usually I substitute the meat in your recipes and do some magic to make the recipe vegan. But when your recopie is vegan right from the beginning it’s ‘ bayram gibi’ to me🤗thank you 🌸

      Yes, I'm so grateful when you cook with more vegetables. I prefer no meat or cheese ut, WE ALL need to put more vegetables in our diet and whole grains. Everyone prefers to eat the richer foods but, the greens and root vegetables and squashes are medicine for our bodies and good health.
      PLEASE USE MORE VEGGIES IN ALL RECIPES AND PLEASE MORE VEGAN AND VEGETARIAN MEALS.

      ​@@barrez9307and the interesting thing is that after a certain age and maturity in the body and after a certain level of acclimation, the greens and roots taste more like the "rich" stuff as refreshing as they are and the usual "rich" stuff everyone else reaches for starts to taste and feel like crap!

    I use your other bulgur pilav recipe all the time. When I want to stretch the pilav or give it more protein, I add chickpeas or maybe stir in some other cooked beans at the end. Thank you for always having so many vegetarian dishes! 🥰

      I've grown them the last couple of years. If you want larger leeks, plant them farther apart. Sometimes smaller leeks are nice, so planting them very close together is also good. I plant some each way. They're very easy to grow, and no pests seem to bother them.

    Thank you for the video! Just one thing - in the USA leeks are grown in a very sandy soil. If you don't slice them vertically and wash them well, you'll likely get sand in your food.

    This looks delicious! Refika, since your earlier video about bulgur (thank you!) I have tried cooking with different sizes. For many months now my jar of rice has just been waiting, because I always reach for the bulgur. My favorite is the very coarsest. It becomes so flavorful and also retains a good texture even when reheated! I think I should start using the rice for rice pudding :)

    Dear Refika,I love your recipes,and as I am a vegetarian you comply to all my needs...Now there is one thing that I would LOVE to know about (my daughter went to your lovely country several times and she told me about probiotics (bars?) where they serve the water of fermented vegetables,and she absolutely loved it and as I make at home pickles,I would appreciate if you could give me the how to of this incredible fermented vegetable water....Thanks in advance,..

    Wow. So delicious and I couldn't even find bulgur here. I have some ideas but those stores were closed by the time I went to look for it. So I substituted brown rice and added some chickpeas for a little more protein. The layers of flavour in this are insane. I will keep looking for bulgur and if I can find it, I will definitely make this again. 🤤🤤🤤🥰
