Hello! I don't usually comment but I love all your videos. For a Tosi recipe, I would definitely recommend the Candy Bar pie. She describes it as a pain to make and she's right, but it's definitely worth it! The recipe's in her first book: Momofuku Milk Bar. Hope you take the time to look for the recipe and try it.

I've made about six of her cakes and I have to tell you that they always taste so much better homemade versus if you go into the bakery and actually eat things there. I think it has to do with the freshness and quality of Ingredients. Loved seeing some of your new production techniques as well. Maybe give her pretzel layer cake a shot!

Pumpkin pie, my absolute favorite since childhood! A close second is peach pie, but Thanksgiving and Christmas deserve pumpkin pie. Peaches are a summer thing anyway. BTW, sweet potato pies are just pumpkin pies made from sweet potatoes, the rest of ingredients are the same! Great video!

Last year I made my own pumpkin puree to make myself pumpkin spice latte at home. I just steamed the pumpkin, blended it and then caramelized it in the stove. Really sweet, really tasty. I always thought the canned pumpkin was made with some weird blend of ingredients or something, but if it's just pumpkin I don't understand why it's so special, so the cost of import is not worth it at all.
Do you think you could ever make the dulce de ledge pumpkin cake truffles? They were SO good but I want to make them because they don’t have them right now and they’re expensive.

Using fresh is always better. Just remember you won't need as much as called for in the recipe. When pre-ground spices come to you they are already going stale. When you grind as you cook/baker it's much more potent.
Corn syrup seems to be a north American thing; allegedly, inverted sugar is extremely bad for you. I've never found corn syrup in the UK unless it's golden syrup.
It is true, no one in the rest of the world understands why North Americans savage their pumpkins into a stodgy gloopy pie. I'm pretty sure no one really cares about the pumpkin part, its the pumpkin pie spice that everyone likes. I expect we could make anything at all with that flavor and call it a "tradition" and it would be wildly successful... Oh, wait...we already do.

I heard that too. Canned pumpkin is usually not all pumpkin.
Butternut squash is close enough to pumpkin that I can’t tell the difference.
