Hi, Looks very nice!! My compliments. I think this is still the tastiest way of making fruity fillings for macarons. No use of chocolate(!) But I find that these curds tend to be a little too soft. Don't you use any stiffners like gelatine or corn starch to stabilize these fillings in order to prevent them from squirting out sideways when you take a bite?

Can you change the amount of the sugar you put into the passion fruit curd? I prefer the curd to not be too sweet because I feel that the passion fruit already has that sweet but sour taste to it. Changing the amount of sugar, would it hurt the curd?
Also my shell turned brown . In the other batch I kept on the lower rack and I tried taking the off immediately after Browning but the got stick to the parchment paper.. can you please help me with this? Thank you

First weigh your egg whites, then follow this formula - egg white - 1; castor sugar for beating with egg white - 0.8; almond flour - 1.25; powdered sugar to be mixed with almond flour - 1.5 Example: If your egg white weighs 60 grams, then Egg white - 60 x 1 = 60 gms; castor sugar - 60 x 0.8 = 48 gms; almond flour - 60 x 1.25 = 75 gms; powdered sugar - 60 x 1.5 = 90 gms. These ratios have always worked for me and you needn't worry about the eggs being of inconsistent size. Hope this helps ;)

I used to eat the seeds and im still alive with no tree growing on me 😂
I used to think like that with watermelon seeds, apple seeds, popcorn/corn seeds, orange seeds, etc.
It's not true.You can eat whatever seed,and nothing is gonna grow in your stomach.Don't worry.
that's really funny but yeah, it's completely fine to eat them😂😂 they are actually used for texture on other desserts!

this is a year late but lower your oven temperature and also use a silicone baking mat instead of parchment paper !
