There is a lot of cooking-related content I like on YT, but this is one of the few shows that I really love. Apart from Kenji/Serious Eats and Good Eats, there is almost no touching upon the science in cooking, which is a shame. So this is really appreciated.

I wish Dan would have discussed the difference between sweet potatoes and yams.
Botanically unrelated (sweet potatoes and potatoes are related; yams are not). Enslaved Africans noted that the New World sweet potato looked superficially like a yam so perhaps to keep their spirit in their homeland, they called the very different but equally versatile sweet potato yams. Southerners and Okies like my family continued to use the term "yams" and I believe you can still find canned "yams" in stores. I doubt many westerners have ever actually had a genuine yam.
Dan's videos are pretty light in mood. I suspect he wanted to avoid the whole "enslaved people" topic.

I have another contender for best sweet potato dish: a sweet potato smoothie. Cook the potatoes (I use a Crock Pot with just a small amount of water), cut them up in cubes and freeze them in small portions. Put a portion in your blender/Nutrabullet/Ninja with two pitted dates, a generous amount of cinnamon and nutmeg, and milk or milk substitute. Tastes like liquid pumpkin pie 😋.

My favorite and simplest receipt for sweet potatoes is to put them in whole on a baking sheet for an hour at 350. Then let them rest until the skin separates from the flesh. They are soft and juicy but will hold themselves together while falling apart with a fork.

Japanese sweet potatoes make excellent fries without the parboiling and the corn starch slurry.
I only had the Japanese sweet potato once. I remember thinking it'd be good for pies because it seemed much sweeter than the variety we have here.

Best snack in the world-from India.Oven roast whole sweet potatoes(about 40 minsbut a 6min prelim in microwave cuts down roasting time by 15 mins) till the juices are bubbling on surface.Cut in half lengthwise,sprinkle lightly with salt &freshly ground pepper &a generous squeeze of lemon juice
Scoop out &eat with spoonThe crispy skins too are tasty.The flesh is a delish alternative to mashed spuds esp with roast pork
I had some sweet potatoes that needed cooking before they hit the compost bin, I cut them in chunks coated in oil and salt and threw them in the air fryer yumm. Having said that I am going to try this as I love sweet potatoes 🍠

I often make a sweet and salty nut butter sauce for roasted sweet potatoes. Any nut butter, sesame oil, a little salt and a generous amount of sugar :)

Omg dude!! I tried ur version and have to admit this was an amazing way to make them. We do the same, but cut them the round way and cook them in butter and lots of sugar on top till crispy on outside. Delicious too! For Thanksgiving we do it that way! They disappear fast! I love ur way too.

Note that this recipe calls for starting the potatoes in a cold oven. Choose potatoes that are as even in width as possible; trimming the small ends prevents them from burning. If you prefer not to peel the potatoes, just scrub them well before cutting.

Toss potatoes in large bowl with oil, salt, and pepper to taste until evenly coated. Line 18- by 13-inch heavy-duty rimmed baking sheet with aluminum foil and coat with nonstick cooking spray. Arrange potatoes in single layer on baking sheet and cover tightly with aluminum foil. Adjust oven rack to middle position and place potatoes in cold oven. Turn oven to 425 degrees and cook potatoes 30 minutes.

Remove baking sheet from oven and carefully remove top layer of foil. Return potatoes to oven and cook until bottom edges of potatoes are golden brown, 15 to 25 minutes.

Remove baking sheet from oven and, using thin metal spatula, flip slices over. Continue to roast until bottom edges of potatoes are golden brown, 18 to 22 minutes longer. Remove from oven; let potatoes cool 5 to 10 minutes; transfer to platter and serve.

side tangent on the asian sweet potatoes - don't throw them out if they sprout! it's very hard to get them to grow actual sweet potatoes, but plant them and the stems of the upper plant can be eaten and are very tasty tossed in oil and garlic. :)

Y'know, we brewers do this with our mashing process, soaking crushed barley malt in hot water for an hour for optimal starch-to-sugar conversion. Example: crush the barley grains, soak in hot water at 156F for 1 hour (aka strike water). I imagine you could thin-slice sweet potatoes and soak them at 150-155F for an hour, quick-grill them to caramelize the surface, then slow-bake in the oven until tender. Result: max sugar conversion and caramelization for max flavor.
I've accidentally sprouted sweet potatoes in my kitchen. They make for beautiful plants.

Yes after harvesting sweet potatos we stage them for couple of days before cooking them.

Dip sweet potato fries in brown mustard! I always put a bit of mustard every time I eat them baked. To me it’s a match made in heaven.
It would make my year if Dan would make a video about turnips. My family were turnip farmers but all the turnip knowledge passed with the older generation before I had the chance to pick their brains.

I don't deep fry my sweet potato chips. I place them on a baking tray, near the top of the oven, at about 200 C. Sprinkle with a little oil, and dried thyme. 20 minutes or so later, delicious chips. Surely, healthier than cooking in all that oil.
The good thing is that, coming from I'm Montreal, QC, I'm used to soft fries in my Poutine. It's all good. Thanks!

I don't know if I just buy out of season sweet potatoes(your typical red garnet)or old sweet potatoes, but they always come out mealy instead of sweet no matter what or how I cook them, from the grocet stores. I tried wrapping in foil and smoking them for an HR+ or baking them for an HR. They still come out mealy. It's carmalized but still mealy. I've grown my own and they taste different (sweet) from the store bought one.

My mom used to make baked sweet potatoes with ham when I was a kid. She would mix brown sugar and cinnamon with softened butter to serve on them. Me and my sister would load our sweet potatoes with it until they were more like dessert lol
I love sweet potatoes.It was the only starch I knew as I kid in the South. I didn't know there were white potatoes until I was 17 and moved to New England. Anyhoo, ATK has a recipe for faux steak fries with white potatoes and the cornstarch slurry and they are baked in the oven. Have you tried a baked, slurried sweet potatoe from the oven?
