    MACAPUNO CAKE
    Ube cake is a traditional filipino chiffon cake or sponge cake made with ube halaya.
    FOR DRY INGREDIENTS:
    2 1/4 Cups cake flour
    3 Teaspoons baking powder
    1/2 Cup sugar
    1 Teaspoon salt
    FOR WET INGREDIENTS:
    8 Egg yolks
    1/2 Cup vegetable oil
    3/4 Cup milk
    1/2 Cup ube/halaya
    1 Tablespoon vanilla extract
    3 Teaspoons purple/ube food color
    FOR MERINGUE INGREDIENTS:
    8 egg whites
    1 Teaspoon cream of tartar
    3/4 Cup sugar
    FOR FROSTING INGREDIENTS:
    3 Cups whipping cream
    1/2 Cup sugar/sugar powder
    1 Teaspoon vanilla extract
    OVEN:
    Bake in a pre-heated oven at 350 fahrenhiet for 35 minutes.
